Be FoodSavvy and turn jackets to wedges
How are you holding up with the very unusual heat in the UK (and elsewhere)?! What are your meals like? Have you resorted to cooking outdoors on the barbecue? easting salad? or just carrying on as usual? Have you been rotating the same cool meals? or struggling to think what to cook without overheating your house even further?
Which leads me to jacket (or baked) potatoes. These are one of the foods that I often eat, especially with a salad and some houmous. So, my question to you is: have you ever cooked too many baked potatoes? and then found yourself with a couple left over? Maybe you were too full to eat them all? plans changed? or you simply made more than you needed? If you were cooking baby jackets – maybe your eyes were bigger than your belly? Anyway, rather than putting them in the bin or in that new food caddy if you’re local to me! I suggest that you cool them down and pop them in the fridge instead.
In the next day, or two, you can transform those leftover baked potatoes. Enter delicious crispy potato wedges. Minimal preparation needed! Basically, slice, spray, season, cook!
You might even find you prefer these wedges to the original baked potatoes! They are crispy on the outside, fluffy in the middle and can lift a whole meal. They make a delicious focal point, a great side dish, or even a tasty snack.
These are quickest in the air fryer but they work just as well in the oven. You could even cook these in the the top (coolest) part of the barbecue!

The Wedges Recipe
These are very simple to make once you have your cooled jacket potatoes! Slice the potato in half lengthways, then cut each half in half again to give you four wedges. If you have larger potatoes, you may want to cut each piece again so you have eight wedges instead. Place them on a plate or chopping board, spray with a little oil, or brush with oil if you don’t have a sprayer. Grind some salt and pepper over the top, then add a little more oil spray to help the seasonings stick. Place the wedges in the air fryer and cook at 200°C for 9 minutes until crispy and golden. Of course, you can add extra seasonings before cooking, such as garlic granules, Cajun spice, Italian herbs or even nutritional yeast. Just make sure all your chosen seasonings are added before the wedges go into the air fryer so they stick nicely to the potato. If you are yet to buy an air-fryer, then you can put these on a baking tray at Gas Mark 6 (400f / 200c) for approximately 20-25 minutes.

Serving
Serve your crispy potato wedges hot with your favourite dip, alongside a salad, or as a tasty side dish for your favourite meal. They are great with houmous, coleslaw, yogurt and mint, tahini drizzle or just as they are! Ideally serve them fresh and hot when they are crispiest, but they are great eaten cold straight from the fridge too!

Storing
Baked potatoes can be stored in the fridge for up to three days before making these wedges. Once cooked, the wedges are best enjoyed fresh while they are crispy, but any leftovers can be stored in an airtight container in the fridge for a day or two and reheated in the air fryer or oven until hot.
