Delicious vegan shortbread perfect for a Valentines gift!
Put the sugars in a large bowl and using a wooden spoon, beat the butter in until you have a smooth creamy consistency.
Sift the flour in and mix until the dough comes together.
(optional step) If you wanted to add small chocolate chips, or roughly chopped nuts to the dough, you can add these now (divide the dough if you wish). Alternatively use the chocolate/nuts for decorating once cooked.
Roll out the dough to 0.5-1cm thick and cut in to shapes using a sharp knife or cutters. If you want to add centres to your cookies, cut two the same shape, then cut out the centre on one. Stack the cut out cookie on top of the whole cookie and gently press them together.
Put the cut cookies (allow some space between them) on a lined or greased baking sheet, use a fork to make a decorative pattern (or letters). Sprinkle with sugar if you wish, then place in the fridge for 30 minutes to chill.
Remove from the fridge and fill any centres with crushed boiled sweets, rock or jam (not too full). Bake (in a pre-heated oven) until slightly golden at Gas Mark 5 (375f / 190c) for 12-17 minutes.
Once the cookies have cooked allow them to cool slightly on the tray (they will be soft at first but quickly firm up). Decorate with sugar, cinnamon sugar, drizzled chocolate, or dip half in melted chocolate then sprinkle with nuts or coconut.
Arrange perfectly and wait to be swept off your feet (after all the cookies have been devoured)!
