Make all your pancakes at once by baking the batter in the oven! One giant tray full of your favourite pancake mix! Leave it to cook while you get on with your morning routine! Perfect #weekendbreakfast
Put the banana, oats, flour, milk, baking powder, salt and flax in a blender and blend until combined. The mixture should be fairly thick but pourable (add more milk if required).
Pour into a lined baking tin (we used a 26cm x 17cm rectangular tin) so the batter is about 0.5cm. You should have some left over.
Scatter your berries, chocolate and half the sugar over the top, then drizzle a bit more batter over to partially cover them. Sprinkle the remaining sugar over the top. The batter should not exceed 1cm (0.75cm is ideal)!
Bake at Gas Mark 6 (400F / 200c) for 20-30 minutes. The batter should be just starting to get crispy around the edges. The top will likely crack but this doesn't affect the taste. Cook for a bit longer if you want a crispier bake.
Serve with your toppings. Enjoy!
