A healthier version of a digestive biscuit, perfect for a quick snack, dunking in a mug of tea or even for breakfast!
Cream the sugar and the butter together until you have a smooth creamy mixture.
Beat the banana in, then add the oats, flour, baking powder and ginger.
Gently mix until combined, then spoon 12 walnut-sized balls onto a lined baking sheet (space apart as they will spread). Gently press down to make them a bit flatter.
Bake at Gas Mark 4 (350f / 180c) for 12-15 minutes. They should be lightly golden on top and starting to brown around the edges. Allow to cool for a few minutes on the baking tray before moving to a cooling rack.
If you wish you can drizzle chocolate over the top once cooled for extra yumminess! :)
Store covered (a plate with kitchen roll on top is fine) for up to 5 days.
