Ten minutes or less is all you need to have delicious homemade chocolate pudding! Vegan and gluten free too!
Heat the 500ml of milk in a large pan until it just starts to bubble.
While the milk is heating, mix the cornflour, cocoa powder and sugar together in a heatproof bowl, then add in the remaining 50ml milk (and vanilla/ alcohol if using) and mix to a smooth paste.
When the milk is heated, very carefully pour it into the chocolate paste and stir a couple of times. Now, pour the mixture back into the saucepan, put on a low heat and stir continuously until it thickens. If you are adding extra chocolate, add it as soon as you put the mix back in the pan so it has time to melt before the pudding is ready.
Remove from the heat and pour into individual dishes/ramekins. Gently tap the dish on the table to settle the top. Allow to cool or eat immediately. Can be made in advance, cooled, covered and refrigerated for up to 5 days.
Serve with fruits, biscuits and nuts. Decorate with grated chocolate (once cooled) or crushed nuts before serving. Enjoy!
