Baked Nectarines

I love fresh nectarines and at the moment here in the UK, they are everywhere! However, as the weather is getting a bit chillier, I decided to try baking these so I could have a warmer dessert!

Juicy and sweet just waiting to be devoured!

These are good! 🙂 These are real good! The flesh gets juicier and sweeter. The cinnamon pairs perfectly with the nectarine (it’s not just for apples)! The maple syrup gives that subtle caramel taste and the yogurt adds a touch of creaminess and decadence. They also look great and could be served for guests as a quick dessert (add a sprinkle of granola and serve with fresh berries)!

You hardly need a recipe, but here it is just in case! 😀

Baked Nectarines

Gather
  • 1 medium nectarine (per person)
  • 1/4 teaspoon cinnamon
  • 2 tablespoons plain yogurt (natural or vanilla)
  • 1-2 teaspoons maple syrup (or favoured liquid sweetener)
Prepare
  1. Carefully score the nectarine all the way around the centre then cut all the way to the stone. Hold one side in each hand and gently twist in opposite directions and pull apart. See if the stone will come out or (cutting away from you with the nectarine on a board) gently cut around it until it becomes loose. You should now have two nectarine halves both with a central cavity.

  2. Sprinkle half of the cinnamon over the cut edges, then place on a baking sheet, cut side up and bake on a medium heat for 15-30 minutes. The time will depend on the ripeness of your fruit.

  3. Mix the yogurt with all but a sprinkle of the remaining cinnamon and half the maple syrup. Spoon this into each cavity. Drizzle with the remaining maple syrup and dust with a sprinkle of cinnamon.

  4. Eat as they are or serve with fresh berries and crunchy granola! Enjoy!

Once baked the nectarines release more juices and just melt in your mouth! Maple & cinnamon too…
