Cheers! Make your own (vegan) Christmas drinks!

Are you in the Christmas spirit yet? Have you written all your cards? sorted all your presents? written your Christmas menus? organised parties, meals or get-togethers? I’m sure there’s not that many ‘sleeps’ left and you better start to get yourself organised! 😀

Me, erm, well, strictly speaking we don’t actually ‘do’ Christmas but that doesn’t stop us enjoying everyone else’s festivities and making the most of all the yummy food and drink going around! 😛 That said, we do buy a few presents, we do send ‘Seasons Greetings’ cards out (I must sort that)! and we do soak up the happy and joyous atmosphere which is starting to surround everyone and everywhere.

What am I up to today… I’m going out for a Christmas meal with a bunch of friends!!! I’m looking forward to my vegan and gluten free meal being prepared by someone else – including dessert! and I will no doubt report back on it soon!

Have a look at this delicious drink which I created almost by accident! I had intended to make hot chocolate but realised with a few adjustments that it was far superior to drink chilled over ice! 😀 There’s no alcohol in here (or dairy, egg, gluten, soy) so it is suitable for everyone! 😀 Hooray! Great for the kids so they think they’re being grown up, great for your alcohol free friends and family and great for your designated drivers! Much cheaper than buying a bottle of something, saves you battling through the shops and tastes so good! Woohoo!

I’d love to know how yours turns out and if you add any extra flavourings? I’m going to make a mint one, then an orange one…

Creamy chocolatey iced (free-from) glasses of yum!

 

Cheers! make your own Christmas drinks (Vegan & Free-From)

  • Servings: 3-4
  • Difficulty: easy
  • Print

Gather

  • 1 packet (200g) coconut cream
  • 200ml coconut milk (unsweetened carton)
  • 300ml cold water
  • 1 teaspoon maca powder
  • 1 tablepoon coffee powder
  • 1 teaspoon cinnamon
  • 2 tablespoons cacao powder
  • 3 teaspoons maple syrup

Method

  1. Put everything in a saucepan and gently heat! for 5 minutes.
  2. Add to a blender in batches and blend well (if your lid has a centrepiece, remove this to allow the steam to escape).
  3. Strain (to remove the coconut pieces).
  4. Allow to cool, then refrigerate.
  5. Pour over ice to serve.
  6. Enjoy!

Serve & Store

  • Add a bit of your favourite extract – try orange, mint or vanilla.
  • Serve with your favourite biscuits.
  • Add a splash of alcohol if that’s your thing! I’d suggest sherry!
  • Keeps refrigerated for up to two weeks.

      Thanks Angie… it tastes a bit like ‘Baileys!’ Irish cream! 🙂 and if you added a splash of sherry I’m sure it would be a pretty near match! Can’t say I’ve ever tasted ‘Thai’ iced coffee? Intriguing, going to look that up! Eek… 15th Dec did I say that! Maybe that was a choice I gave and you chose the earlier date! 😛 If you ‘need’ me I’ll squeeze it in for you! 😀 xxx
