Chocolate Cake!
It’s been a while since I’ve posted a chocolate recipe and as I was playing in the kitchen this week and created this delicious light fluffy cake, I thought I’d share it with you! 🙂 This would be perfect for Valentines Day, either as dessert or just to say ‘I love you’! 🙂
I was aiming for an egg free, dairy free cake and decided to experiment with aquafaba again. I’ve made several things using aquafaba but not cake. For those of you puzzling over aquafaba (where have you been!) it is the liquid from a can of chickpeas (or other beans) which you’d normally drain away! Yes, this gloopy liquid actually whisks up to resemble egg whites and in a cake it is perfect! 🙂 I added apple cider vinegar to the whisked mixture, did a taste test and not a hint of chickpea flavour remained! 😀 What I had was a fluffy white neutral tasting mix. A perfect base for a delicious light cake!
I’m sharing this cake over at Fiesta Friday where once again I am co-hosting! 😀 You really should come over and join us (if you’ve not come from there already!) The regulars are a very friendly bunch who love to share their recipes and creations each week. The idea is that you write a new post, adding a link to Fiesta Friday, add two more links to the co-hosts for that week, then add your post link to the party. It is really easy to do! 🙂
After you’ve added your link, you have a look and see what everyone else has made, hop around, click like, write a comment and have a chat. IF… IF you follow the rules, i.e. add all the three links, are visible at the party – e.g. answering comments, visiting others, writing on the main post etc., then you get the chance to be featured! 😀 That means that at the following weeks blog party, your post is highlighted with a comment for all to see! 🙂 Winwin… more visitors, more backlinks, more exposure for you! Hooray!
This week I’m co-hosting (Laurena @ Life Diet Health) with the very talented Jhuls @ the not so creative cook If you’ve not been over to Jhuls’ blog, have a look, she makes the most delicious foods with great photos. 😀
So, check out this recipe, pin it, print it, share it or whatever you normally do 🙂 write a comment, then hop over to Fiesta Friday! See you there! 😀

So yummy it is 🙂
Thanks! 🙂
This vegan cake sounds super yummy, Laurena, at first I actually thought it was pancakes (my brain is so confused about the proximity of pancake day and valenitine’s day!) – I love the use of aquafaba in this recipe, I only ever used it to make vegan mayo. Thank you for co-hosting FF again! Enjoy your weekend:)
Thank you Monika. You know it was actually going to be a pancake post! I made a lovely caramelised banana pancake in preparation for pancake day but realised I only posted pancakes the other week! Aquafaba made this cake so light and fluffy… I’ve not used it for mayo yet, I’ll have to try that! I’m getting the hosting bug (& I had some free time)! Have a great weekend, x
I haven’t tried using aquafaba. Your post is inspiring me to try. I love chickpeas and you know that 😀 but I haven’t tried using its water aside from mixing with the peas for hummus. The cake looks so pretty, Laurena. Thanks for sharing the co-hosting duties with me. Happy Fiesta Friday!
Thanks Jhuls 🙂 I’ve even made meringue and marshmallows with aquafaba! 🙂 It’s a fantastic ingredient, you really should try it! Lovely to co-host with you 🙂 Have a great weekend. x
Beautiful dessert, perfect for Valentine’s day !!
Thank you very much!
Wow, this cake is healthy and looks great! Perfect for Valentines. Thanks for sharing:)
Thanks Lily 🙂 I’m going to have a play with my flavours for Valentines Day… I’m thinking mocha cake with coffee buttercream and pecans.
Such a cute idea for Valentine’s!
Thanks Kat. Are you doing anything for Valentines?
This cake looks beautiful!
Thank you very much☺Happy Valentines Day
Just like I introduce you to “new” things you do the same with me. Now I know what aquafaba is – it’s such a different ingredient for me in baking. Thanks for co-hosting Laurena – again 🙂
Judi it really is something different and it’s so amazing! I hope you decide to have a play with it! ? I love to co-host when I have time… So many things I wouldnt normally look at!☺
You certainly learn about different cuisines and ingredients which I love being a former teacher/librarian. I have a separate area for just my Indian ingredients and maybe I can add this new item to my collection 🙂 Like you I probably would not look at some posts but when I co-host I look at them all. I told Angie I want to back off being a co-host – the party needs new people and I have been around a long time.
Noooo we need you Judi! ? It’s good to have familiar co-hosts as well as newbies and if you enjoy doing it and have time then why not!?Besides… the newbies won’t know you’ve been here since the beginning ?
Love chocolate cake-thanks for sharing this healthy version! 🙂
Thanks Nancy. Making some more today!?
This is so cute!! You can never go wrong with a good ol’ choccie cake ☺️

Thank you Lis ☺ What do you normally put in/on yours ?
I made a really nice one with my friend a few weeks back, we put peanut butter in between each layer (it was a three layer cake), was so good! ☺️
Yum! 🙂
