Bananas!
Over the festive season, I stumbled upon a fabulous looking dessert and I just had to try my own version. This is quick, easy, and perfect for everyone – whether you’re a dessert pro or just starting out. With only three main ingredients – banana, a sweet spread, and puff pastry (light or gluten-free options work too!), it’s a healthier-than-most indulgence. Bananas are packed with nutrients like potassium, and whilst many of you may still be sticking to New Year’s resolutions, a little dessert can be just what you need! The Mummy Banana Puffs Recipe
This isn’t so much a recipe as it is a simple assembly of delicious ingredients you probably already have at home. All you need are bananas, puff pastry, and your favourite spread – whether it’s Biscoff, nut butter, chocolate, or another vegan option. Simply fill, wrap, bake, and enjoy! Everything is easy to find in most UK supermarkets, so there’s no need to hunt for specialty items. These Mummy Banana Puffs are proof that something so simple can be irresistibly good. Bananas filled with your favourite sweet spread, wrapped in pastry and baked.
- 4 small – medium bananas (1 per person?)
- 4 tablespoons sweet spread (Biscoff, Chocolate, Peanut butter)
- 1 pack ready rolled puff pastry
- *optional toppings or extra fillings (chocolate chips, nuts, icing sugar, syrup)
Take the pastry out of the fridge and remove from the box and plastic wrap. Leave it rolled whilst it comes to room temperature.
Preheat the oven to Gas Mark 6 (400f / 200c).
Peel a banana, hold it firmly, then using the handle end of a teaspoon, carefully make a groove along the top of the banana. Repeat with all the bananas.
Fill the groove with your chosen spread. Add nuts or chocolate chips if desired. Fill the remaining bananas (the same or different).
Carefully unroll the pastry and mark roughly where it would divide into 4. Your choice now depending on your banana. You can do full length strips any size in width from 1.5cm to 3cm. Cut a strip, then starting at the top of the banana, wrap the pastry around and pinch together, wind the pastry around the banana (like an Egyptian Mummy)! When your strip ends, cut another the same and push the two ends together to join, then continue. Repeat with more strips until the banana is completely covered. Ensure any gaps are pressed together. Now repeat with the other bananas (try different width strips to see which you prefer).
Place your banana mummies on a lined baking tray. Brush the tops with milk if you wish and add nuts or sprinkle with spice (useful if you've made different fillings and want to distinguish them once cooked). Bake for 15-20 minutes (Gas 6). Remove and serve.

Serving
Serve your Mummy Banana Puffs as they are, or get creative with some tasty toppings! Drizzle with maple syrup, add a dollop of vegan yogurt, or sprinkle with chopped nuts for a bit of crunch. You could also dust them with icing sugar, serve with a side of warm chocolate sauce, or pair with a scoop of vegan ice cream. A pinch of cinnamon or mixed spice would also be a delicious addition. You can of course, also eat these once they’ve cooled – you could even pop them in a lunchbox for a tasty surprise!
Storing
The cooked Mummy Banana Puffs are best enjoyed hot and fresh, straight out of the oven. However, if you have leftovers, they can be stored in a sealed container in the fridge for a couple of days. For longer storage, they can be frozen, though they’re always best when made fresh. Simply reheat in the oven to bring back that crisp, golden texture.
