Leave, Lincoln & Luscious Lasagne!
My laptop hasn’t been on since last Friday! I’m not (so I thought) interested in politics, but unless you’ve been hiding under a rock (or maybe in the desert) it’s a bit hard to avoid what’s been going on in the world. Even my primary school aged son came home and said they’d had their own EU discussion and vote at school!
So on voting day, I did feel compelled to go to bed with my tablet (I can watch live TV on it) and watch as much as the EU referendum vote counts as possible. I was watching it before the results came in until about midnight. I was watching it from 2.15am until 3.45am (it’s Ramadan so the house was awake!) and I woke up unbelievably at 6.30am to find that the UK voted leave. So what do I think? What do you think???
I found myself drawn to the FTSE 100 – watching rates drop dramatically… but they’ve recovered. I had texts and emails asking questions and giving me facts. I listened to Nigel Farage (UK Independence party leader) categorically state that it shouldn’t have been part of their (leave) campaign to say that the UK £350m per week spent on the EU shouldn’t have been promised for our NHS (National Health Service)! I listened to our Prime Minister David Cameron give a resignation speech. I listened to the panic, the excitement, the fear, the confidence, the regret and the relief.
Am I interested in politics? No, not really. Am I concerned about the future of the UK, the EU, the World and the impact on everyone’s lives… of course I am – who wouldn’t be in these uncertain times? BUT, what will be, will be. Life will go on. We will survive. We will prosper!
Enough of the politics, have a look at some lovely photos of Lincoln! We went to visit my little sister over the weekend and took the kids out (when the rain stopped). It’s a lovely place with lots of history, quaint shops, a castle and of course the cathedral.
Lasagne! 🙂 No, not meat, cheese and pasta. No, not veggies, cheese and pasta! This lasagne is for dessert!!! It is SO good that I just had to share! I have used sliced banana as the ‘pasta’ layer and fresh fruit for the ‘meat’ or ‘veg’. The addition of pureed fresh apricots, kiwis and strawberries gives a refreshing twist to this fruit lasagne. There’s optional add-ins too such as oats, chia and cashew vanilla cream… all with a cherry on top! 😛 THIS… has to be your go to dessert this summer! It’s a show stopper! It’s totally customisable. It’s delicious! It’s an EASY way to get your children eating their five-a-day (or 7-a-day!) Especially if you let them build their own! THIS is seriously good for you!!! 😀
