Who knew there was a whole day dedicated to biscuits?! Well, apparently today – Thursday 29th May is National Biscuit Day – and I, for one, am here for it! Whether you’re a dunker, a nibbler, or a full-on biscuit enthusiast, today is the perfect excuse to treat yourself (as if we needed one… right?)

Of course, being Life Diet Health, we’re doing things the vegan way – no dairy, no eggs, and and always made with simple, wholesome ingredients! And yes, they’re still delicious! So whether you fancy a nostalgic treat, want something quick to whip up with the kids, or are just looking for an excuse to pop the kettle on, I’ve got you covered.

But wait – biscuits or cookies?

Depending on where you are in the world, the word ‘biscuit’ can mean very different things! Here in the UK, we’re talking about those crunchy, crumbly, sweet treats perfect for dunking in tea. If you’re more familiar with the word ‘cookie’ – don’t worry, we’ve got those too (think chewy middles and chocolate chips)! Whatever you call them, today is the day to eat them. After all, it’s ‘National Biscuit Day’ (or ‘Cookie Day’, depending on where you are) – and what better excuse to celebrate than with a fresh batch of homemade treats?

Serving

Serve your biscuits with a nice hot cup of tea or your favourite plant-based milk. They’re perfect for sharing (or not!), afternoon treats, or anytime you need a little pick-me-up.

Storing

Store your biscuits in an airtight container at room temperature. They’ll keep fresh for up to a week, if they last that long! As the biscuits are made without preservatives, homemade is best enjoyed sooner rather than later.
