Luscious Lentils π
Well, last night I suddenly thought the blog tomorrow for the A-Z Challenge is
and in this house, that has to be ‘lentils’ π Lentils are such a wonderful food full of protein, fibre, iron and a whole range of minerals π This dish is very easy and quick to make and you can vary the taste to your liking.
Gather
- Coconut oil
- 1 onion (approximately 100g) cut into eight wedges
- 2 garlic cloves quartered
- 25g tomato puree
- 600ml boiling water
- 100g red split lentils
- 1 x 400g tin butter beans drained and rinsed
- 1 teaspoon black pepper
- 1 teaspoon salt (I used pink Himalayan)
- 1/2 teaspoon paprika
Prepare
- Melt the coconut oil and add the onion and garlic.
Coat in the oil and cook for a couple of minutes.
- Add the tomato puree and mix into the onions.
Cook for 2-3 minutes.
- Carefully pour in the water,
mix well, then add the lentils.
Cook for 5-10 minutes until the lentils start to soften, then add the beans.
- Sprinkle over the pepper, salt and paprika, stir, turn the heat downΒ and leave to cook for five more minutes. Check for seasoning and softness and adjust or cook for a few more minutes if necessary.
- Enjoy!
Serve & Store
- Serve over your favourite grain
- Eat with your favourite bread or wrap
- Add a salad on the side
- Refrigerate when cold and eat within three days
I love red lentils! They are so easily cooked and have a specific aroma that makes them yummy on their own, even without adding anything! π I never thought to mix them with tomatoes… Must taste delicious! π

There’s nothing wrong with that combo, it just never occurred to me. Which is really weird, since my mom used to put tomato juice in almost everything π
I used to use tomatoes in everything when I was first vegetarian (many many many years ago)! I don’t use them so much now but they’re great for bulking up a recipe π
Back when we were on standard diet, I used to eat everything with ketchup. We could never buy enough! π Can wait for organic tomatoes to be in season! Yum! π
Oh no Milica not ketchup! Too much sugar for me! π Never been a fan… not even as a child! π My tomato plants are growing on my windowsill! π π π

Hopefully, they will. But we cannot change them. We can show them a healthy path, but the choice of which path they will walk is only up to them. That was a hard lesson for us to learn.
