Luscious Lentils 🙂
Well, last night I suddenly thought the blog tomorrow for the A-Z Challenge is
and in this house, that has to be ‘lentils’ 🙂 Lentils are such a wonderful food full of protein, fibre, iron and a whole range of minerals 🙂 This dish is very easy and quick to make and you can vary the taste to your liking.
Gather
- Coconut oil
- 1 onion (approximately 100g) cut into eight wedges
- 2 garlic cloves quartered
- 25g tomato puree
- 600ml boiling water
- 100g red split lentils
- 1 x 400g tin butter beans drained and rinsed
- 1 teaspoon black pepper
- 1 teaspoon salt (I used pink Himalayan)
- 1/2 teaspoon paprika
Prepare
- Melt the coconut oil and add the onion and garlic.
Coat in the oil and cook for a couple of minutes.
- Add the tomato puree and mix into the onions.
Cook for 2-3 minutes.
- Carefully pour in the water,
mix well, then add the lentils.
Cook for 5-10 minutes until the lentils start to soften, then add the beans.
- Sprinkle over the pepper, salt and paprika, stir, turn the heat down and leave to cook for five more minutes. Check for seasoning and softness and adjust or cook for a few more minutes if necessary.
- Enjoy!
Serve & Store
- Serve over your favourite grain
- Eat with your favourite bread or wrap
- Add a salad on the side
- Refrigerate when cold and eat within three days
I love red lentils! They are so easily cooked and have a specific aroma that makes them yummy on their own, even without adding anything! 🙂 I never thought to mix them with tomatoes… Must taste delicious! 😉
Milica☺ It’s funny how we both think certain things are normal?Lentils and tomatoes are one of mine! 😛 ? Delicious anyhow indeed… hoping there’s a bowl of this left for dinner tonight! 🙂
There’s nothing wrong with that combo, it just never occurred to me. Which is really weird, since my mom used to put tomato juice in almost everything 😀
I used to use tomatoes in everything when I was first vegetarian (many many many years ago)! I don’t use them so much now but they’re great for bulking up a recipe 🙂
Back when we were on standard diet, I used to eat everything with ketchup. We could never buy enough! 🙂 Can wait for organic tomatoes to be in season! Yum! 🙂
Oh no Milica not ketchup! Too much sugar for me! 😛 Never been a fan… not even as a child! 😛 My tomato plants are growing on my windowsill! 🙂 🙂 🙂
yum yum yummmmmm! What is not to love here?
Sophie 🙂 Absolutely right… thank you! Delicious! 🙂
I was a real garbage eater once 😛 Tomatoes on windowsill? I have to do that! 🙂
Milica isn’t it amazing how our bodies change when we give them what they need without the added junk! 🙂 My plants are growing well 🙂 Enjoy the rest of the weekend. x
For the past 7 years since we started our healthy journey, we transformed so much, both physically and mentally. And still are! 🙂 Love to see the change!
… my health is gradually improving! 🙂 Chronic illnesses you will go to sleep!!! 😛
I am so happy to hear your health is improving! That gives you so much strength to carry on with healthy lifestyle! 🙂
🙂 🙂 🙂 Thank you Milica 🙂 🙂 🙂 I wish everyone else realised that though!!!
Hopefully, they will. But we cannot change them. We can show them a healthy path, but the choice of which path they will walk is only up to them. That was a hard lesson for us to learn.
It’s very difficult to get others to come around to a new way of thinking! Glad you both did though… Where would I be without all your thoughts and ideas! ☺
Thank you, you are too kind! :-*
Ditto! 😛 🙂
☺Thank you ☺ x
You’ve a great blog here <3
Thank you! Hope to see you again! 🙂
