Easy one-pot meal
As the colder weather makes a re-appearance here in the UK, there’s nothing better than something warm and comforting to tuck into. This easy to prepare dish is just the thing for chilly evenings when you need something fuss-free and satisfying. You can make it just like last week’s slow cooker recipe or pop it in the oven using a heavy dish. If you’re in a hurry, it works just as well on the stovetop too.

The Chickpea, Leek & Potato Bake Recipe
The ingredients in this recipe are very simple but come together to create a delicious, wholesome dish. The main ingredients are chickpeas, leeks and potato, all brought together with nutritional yeast and a few basic seasonings. It’s a straightforward combination, but the result is a comforting and satisfying meal perfect for this colder spell.
Nutrients
This dish is a great source of plant-based protein, mostly from the chickpeas, which provide around 19g of protein per 100g. Potatoes also add a small amount of protein, along with potassium and vitamin C, while leeks contribute vitamin K and manganese. Nutritional yeast adds B vitamins, including B12 if you choose the fortified version. It’s a protein-rich, satisfying meal with a good range of essential nutrients

A one pot creamy dish packed full of protein and natural flavours.
- 2 x 400g tins chickpeas with liquid
- 1-2 medium potatoes
- 1 leek
- 3-4 tablespoons nutritional yeast
- Sea salt flakes to taste
- ground black pepper
- Water boiling
- Peel then thinly slice the potatoes into rounds.
- Top & tail the leek (if you save the bottom part, pop it in 0.5cm water, then it will regrow from the centre). then slice it lengthways and clean any soil from between the leaves. Slice the leek into rings.
- Lightly oil the bottom of a large heavy dish or slow cooker, then layer the ingredients. Start with a layer of potatoes, then sprinkle with a spoonful of nutritional yeast and season with salt and pepper.
- Next, add a layer of leeks followed by a layer of chickpeas with their liquid. Repeat the layers, as above (depending on the size of your dish will depend how many layers you get). Finish with chickpeas.
- Press everything down to see how much liquid you already have, then top up as necessary with boiling water. The chickpeas should be just covered in liquid.
- Cover with a lid or foil and cook either in the slow cooker, oven, or stovetop. If cooking on the stove, ensure the liquid is kept topped up whilst cooking. The slow cooker can take as long as you wish (mine was ready in 4 hours on high), likewise depending on your oven and the temperature used, this may take an hour on medium or a couple on low.
- Once almost cooked, stir everything together to combine and check the potatoes are tender and the liquid is reducing to give a thick creamy sauce.
- Serve and enjoy.

Serving
Serve your chickpea, leek & potato bake as it is, or add a fresh salad or even some garlic bread on the side. You could plan whilst prepping, to top your dish with sliced potatoes and finish under the grill to create a crispy topping. Make the dish with more or less liquid to have it more as a soup (more liquid), or creamier (less liquid).

Storing
The cooked dish will store refrigerated for three or four days. It’s best to keep it in an airtight container as it will pick up other fridge flavours easily. This should freeze well for up to three months but will depend on the amount of liquid in it – if freezing remember to portion, label and date.
