Not-feta salad! 🙂 It’s vegan!!! 🙂
I’m so busy and don’t have time to write much but I just HAD to share this with you! This is just amazing! When I was on the plane to Istanbul last month the girl I sat next to shared this great tip with me 🙂 (I know! … how amazing that she had vegan tips)! What do you do? Press some firm tofu to extract the water, cube it into chunks, whisk up a marinade and leave it covered overnight (if you can wait that long)! This doesn’t need to go in the fridge as that would cause the olive oil to harden – leave somewhere not too warm though whilst marinating! and enjoy! 🙂 Once it’s done marinating you can store in the fridge and just let it come to room temperature before eating (or not)! 🙂 You can of course mix up the spices but the base of my version of this fantastic recipe is:
- 220g firm tofu (pressed to remove liquid makes around 200g)
- 3 teaspoons fresh lemon Juice
- 35ml olive oil (can be reduced if necessary)
- 1/4 teaspoon garlic (don’t be generous unless you love garlic!)
- 2 teaspoons apple cider vinegar
- 2-3 tablespoons nutritional yeast
- 1/2 teaspoon salt (can be eliminated if necessary)
- 1/2 teaspoon basil
- 1/2 teaspoon oregano
- 1/4 teaspoon paprika
Add it to salads, put it in a wrap, try it on pizza, have it with pasta… SO many yummy ideas with this one! 🙂 I know I said I didn’t have time to party for the next few weeks months! but I want to share this with Angie at her Fiesta Friday and also at the plant based Potluck Party 🙂

Sounds a great way to get some tasty flavors into some tofu (which I’m afraid for me is generally needed!) And then it becomes a nice versatile ingredient with a great flavor (and you can use it in my empanadas!). Thanks for sharing with Fiesta Friday.
Hello Caroline 🙂 It’s definitely going in your empanadas! 🙂 Thank you! 🙂 Yes, tofu is one of those things which needs flavour adding to it – this is perfect for that as I would never have dreamt of eating tofu without cooking it!
I love the versatility of tofu. You can literally put it in any dish and prepare it in every way! I used to love eating feta prepared and marinated like this, but for some weird reason, it never occurred to me to try this with tofu! It must be super yummy! 🙂
Milica it is super yummy and tofu is (and has been) used in all sorts of my recipes! Ooo… note to self to post my fritters!!! 🙂 How about raw tofu?

Mmmmm, fritters… sounds amazing! I know nothing about raw tofu! 😀 When we decided to go raw, we said our goodbyes to soy-based products. Smoked tofu with herbs was our favorite and one of the last things we excluded 🙂
