Coconut & chocolate lollies.
What says summer more than ice cold lollies? If you’re in the UK, you’ll be well aware that sunny summer days are very few and far between, so we have to make the most of them before they slip away! With just a handful of simple ingredients, you can easily create these delicious lollies to capture all the summer vibes, long after the sun has gone in! Ice lollies in one form or another are something we regularly make and we have a range of lolly moulds. When I was younger I recall making ice lollies using a small thick walled glass with a teaspoon for the handle, so there’s no excuses not to try these!
The lolly recipe
This is a very simple recipe which only needs a few ingredients. Bananas of any ripeness. A splash of your favourite milk, vanilla, coconut and chocolate.
Vanilla and coconut ice lollies with chocolate chips
- 2 medium bananas
- 2 tablespoons milk of choice (I used unsweetened oat)
- 1/2 teaspoon vanilla extract
- 1 tablespoon desiccated coconut
- 1-2 tablespoons chocolate chips
Put the bananas, milk and vanilla in a blender and blend until almost smooth.
Add the coconut and blend until smooth.
Pour into moulds and add the chocolate chips (you can add them in the centre then use a skewer to distribute them or just leave them where they are).
Put the lids on making sure any spare air is removed (so the lids stay on).
Freeze for 1-2 hours until frozen.

Serving
Serve your lollies as they are, or drizzle with melted chocolate. Alternatively, if you prefer ice cream or want something different, try this peanut butter swirl ice cream.
Storing
Store these in the freezer until you are ready to eat! Thaw for a few minutes before eating. These can stay in the freezer for a few weeks, but are best eaten with a few days.
Sharing
If you are sharing these, you could vary the recipe slightly. Stir the chocolate chips through, put them altogether in the centre, near the bottom, or on top. Change the type of chocolate, either in taste (dark, milk, white) or in size (chunks, chips, grated).
