U = Undecided!!!

U = Undecided!!!

It’s not often I can’t make up my mind about something… or is it?! 😛 All through this A-Z Challenge I have found it relatively easy to post each letter, but ‘U’ ?

How many foods begin with ‘U’? There is ‘U’pside down cake which would take a long long time for me to DEGF (Dairy. Egg. Gluten. Free.) it; ‘U’don noodles which are generally made with wheat (I did wonder if you’d notice if I used soba noodles in my photos)!; ‘U’rid dhal but I don’t have any urid lentils; ‘U’nleavened bread which is basically my flatbread recipe or ‘Ugli’ fruit (which seemed the best bet) which unfortunately just because I wanted one, I couldn’t find! Also, if you’ve been following me throughout the challenge, I’m not sure if you noticed but my extra challenge to myself is ONLY to have words beginning with the days letter in the title (except ‘&’ – yes I cheated once and used dessert for ‘E’). I then thought lets have a play on words but you know what… that was even more difficult! There is no positivity with ‘U’ as most ‘u’ words are prefixed with ‘un’! Unrelated, Unconventional, Unthinkable, Unavailable, Unidentified, etc. etc. ! Hence I found myself at ‘U’ndecided! 🙂

Yesterday I was chatting to one of my friends and she invited me for lunch next week. Now, that is a tad complicated (for her, not me)! 😛 She asked “are you still on a clean eating plan?” Oh! ‘clean eating’? I’d not even considered my diet to be that! I replied that I eat salad, vegetables, fruits, chickpeas, lentils, nuts, seeds, grains (but not wheat) etc. 🙂 and she suggested egg & cheese salad (with houmous & crackers). But I don’t eat egg! nor dairy! and I’m vegetarian! So what ‘IS’ my diet??? That I am ‘undecided’ on! 😛 It’s an ‘u’nprocessed, ‘u’nrefined, free of preservatives & additives, wholefood vegan diet… does it have a name? It’s not Paleo. It’s not clean eating. It’s not raw. It’s not alkaline. But it is balanced. It does contain ample protein. It does give me vitamins, minerals and antioxidants. It is filling. It is tasty. 🙂 Seriously though… DOES it have a name? or shall I just call it the Life Diet Health plan! 😛 🙂

Are you wondering where my recipe is today? Not really a recipe just a look at how ‘undecided’ these cashews are!

Then, if you whiz them up in a food processor you get a fine crumb great for dusting sweet or savoury items or for topping vegan pizza with!

If you keep blending them (or if you press the cashew crumb with a pestle and mortar) the oils will be released and you get a wonderful almond butter.

Alternatively, if you soak the cashews in water, drain, then process, you get a soft creamy dip (aka cashew cheese) which can them be flavoured to your liking!

So… undecided or not my ‘U’ post is complete… I think!!! 😛

    I honestly feel that labelling our diets as any one thing is very limiting. We should just eat what we feel is best for our minds and bodies and leave it at that!

      Hello Leetah and welcome to Life Diet Health 🙂 I agree with you about labels but when eating out, or at a friends it would be so much easier to be able to just say I’m a ‘clean vegan’ for example! Knowing that the ‘label’ was understood, rather than spending ten minutes saying I’m vegetarian but I’m allergic to eggs, dairy, gluten and I don’t eat sugar, oh or additives would be so much easier sometimes! It’s amazing how many people think eggs are dairy or that vegans only eat vegetables and that gluten free must mean you eat meat! As my post says though… I’m undecided! and you are right as I therefore have no label! 🙂

    Label or no label, people on a standard diet will ask you, especially if you say that you don’t eat dairy, eggs and meat, what DO you eat then! 🙂 I guess people who are frequently or at least, occasionally eating out, can have a bit of problem explaining what to exclude from meals to the waiter 😀 Anyway, about cashews… We love them. We could eat buckets of roasted ones (if they aren’t so expensive). Now, cream ‘cheeses’, dips, sweet, savory… You name it! 🙂

      Yes Milica… people ALWAYS ask!!! Roasted cashews… Just about to order food 🙂 they do roasted cashews 🙂 thanks for reminding me how yummy they are! 🙂
