A quick and easy way to brighten up your veg!
Cook the onion either in a bit of oil, or water (add more as necessary until the onion is starting to brown). Add the aubergine and courgette, and cook for a minute or two until they start to soften.
Add the pepper and tomatoes then sprinkle over the curry, garlic, chilli, pepper and lime juice then season with salt to your liking. Stir everything together and allow to cook for 5 minutes
Make a smooth paste with the PBfit and water. When the vegetables are cooked to your liking, pour the peanut butter mix over them to coat. Allow to heat through for a minute, then serve.
Once plated, sprinkle with the sesame seeds. Enjoy!
