Satay Vegetables

Something quick and easy for you this week. It was late. I was hungry! We had vegetables left over from a barbecue and I had just seen a picture of satay chicken, so I thought, let’s try satay vegetables! It worked! These vegetables still have their own taste but are covered in a sticky peanut sauce, then sprinkled with that wonderful taste of sesame. These are good! 🙂

If you’re not into chilli then omit the flakes, but then reduce the lime by half which should still give you a pretty good result! Next time I’m going to add some tofu and see if I can manage to make the sauce cover it without being overpowering. I’m guessing it might work with Quorn or soya chunks too, but for now… I’m more than happy with these veg!

Satay Vegetables

A quick and easy way to brighten up your veg!

  • water as required (or use oil)
  • 1 small onion chopped
  • 1 small aubergine chopped
  • 1 small courgette chopped
  • 1 medium yellow pepper chopped
  • 4-5 cherry tomatoes whole
  • 1 teaspoon curry powder
  • 1/2 teaspoon garlic granules
  • 1/2 teaspoon chilli flakes
  • 1/4 teaspoon black pepper
  • salt to taste
  • 1/2 small lime juiced
  • 2 tablespoons PBfit powder (peanut butter powder) (or sub 2-3 tablespoons peanut butter)
  • 4 tablespoons cold water
  • 1 teaspoon sesame seeds (toasted if you wish)
  1. Cook the onion either in a bit of oil, or water (add more as necessary until the onion is starting to brown). Add the aubergine and courgette, and cook for a minute or two until they start to soften.

  2. Add the pepper and tomatoes then sprinkle over the curry, garlic, chilli, pepper and lime juice then season with salt to your liking. Stir everything together and allow to cook for 5 minutes

  3. Make a smooth paste with the PBfit and water. When the vegetables are cooked to your liking, pour the peanut butter mix over them to coat. Allow to heat through for a minute, then serve.

  4. Once plated, sprinkle with the sesame seeds. Enjoy!
