All grown up!

This week is all about reminiscing. Thinking about all the good times that have been had over the last eighteen years! Yes, finally my little boy is going to be an official adult! So we need cake! Of course we need cake! Over the years we have had photo cakes, themed cakes, sporty cakes, chequered cakes, and even an anti-gravity cake. We’ve had chocolate, plain, and multi-coloured sponges. There’s been carefully moulded figures, intricate patterns, smooth icing, rough icing, writing in icing and loads of chocolate!

Now, we need a grown up cake! For a grown up son!


The Cake Recipe

Have you heard the recent news about supermarkets rationing eggs? (16 Nov 2022). Well, thankfully no eggs are needed for this recipe, so you know you can make cake anytime you want! This recipe uses ground linseeds instead of eggs, then you need regular flour, sugar, butter, milk and/or yogurt (or a combination), apple cider vinegar and baking powder. However you are flavouring and icing your cake is up to you, but a splash of vanilla extract is great, or swap a bit of cocoa powder for flour for a chocolate version.

Gather
  • 250 ml milk I used thick oat milk
  • 100 ml natural yogurt I used sugar free soya (or use extra milk)
  • 1.5 teaspoons apple cider vinegar
  • 65 g butter
  • 200 g sugar
  • 320 g plain flour
  • 4 teaspoons baking powder
  • 1 teaspoon bicarbonate of soda (omit if you need to)
  • pinch of salt
Prepare
  1. Mix the milk with the yogurt in a large bowl and add the apple cider vinegar. Mix well and set aside to start curdling.
  2. Cream the butter and the sugar in a large bowl.
  3. Add the yogurt mixture to the butter and sugar. Using a wooden spoon, beat these until roughly combined.
  4. Sieve in the flour with the baking powder, bicarbonate of soda (if using) and salt. Gently fold in until completely combined. You should have a nice smooth mixture.

  5. If you wish, add a couple of teaspoons of vanilla or other extract to the batter and mix in. As there is no egg in this mixture, feel free to have a taste and add a bit more extract if needed!

  6. Immediately pour into 2 greased or lined baking tins and bake at Gas Mark 4 (350f / 180c) for 35-45 minutes. Remove from the tin and allow to cool.
  7. When the cakes are completely cool, chose the flatter cake and use this as the base (you can slice a thin layer off the top if necessary). Sandwich and top your cakes as you wish with buttercream, jam, fresh cream or chocolate.

  8. Decorate the top of your cake with fruit, chocolate, icing and candles!

  9. Enjoy!

What do I need?

You can (as with most of my recipes), make your cake as simple or as elaborate as you wish! Of course, as my cake is for an 18th, then it’s a bit special, but feel free just to leave it plain if you need to!

Storage

If you have any left, the cake will store for 2 or 3 days in an airtight container or in the fridge (especially if you’ve used fresh cream). You can of course freeze any spare cake (careful if you’ve used toffee chocolates if freezing though!) If freezing, portion or separate with greaseproof paper, label and freeze. To defrost, place in the fridge (unless you are having it warm with ice-cream, then 30 seconds in the microwave would work).
