Apple Crumble Cake
When you have lots of apples and have already made apple crumble, baked apple dumplings, apple crumble slice and apple jumble! what do you do? You create something new! Apple Crumble Cake! This is cake. There are spiced apples. and crumble. All. Rolled. Into. One! Perfect!
Your go-to Recipe
I have made this with straightforward ingredients which should be easy to find! Standard butter, flour, sugar, apples, milk and spices, with the addition of ground linseed (to make it vegan). I have used cooking apples, but eating apples work just as well and do tend to hold their shape better! Here’s the recipe:
A light sponge dotted with cinnamon apple chunks with a crumble topping.
- 2 tablespoons ground flaxseeds (linseeds) (or sub 2 eggs or equivalent)
- 6 tablespoons water (for flaxseed only)
- 110 g butter
- 120 g sugar
- 120 g plain flour
- 1.5 teaspoons baking powder
- pinch of salt
- 1 teaspoon vanilla extract
- 2-4 tablespoons milk
- 2 medium cooking apples (approx 220g when prepared)
- 1 teaspoon cinnamon
- 1 tablespoon flour
- for the crumble topping
- 40 g flour
- 25 g butter
- 25 g sugar
First mix the flaxseed with the water to make your flax egg (if using an alternative prepare as directed to make 2 eggs – or beat 2 eggs). Set aside.
Cream the butter and the sugar in a large bowl.
Add the flour, baking powder and salt and start to combine. Leave roughly mixed.
Pour in your egg, add the vanilla and gently mix. Add the milk as required to make a firm but creamy batter.
Peel, core and dice the apples. Sprinkle the cinnamon and flour over, then scoop up the apples with your fingertips and drop back down to ensure they are all dusted with both. Add the apples to the cake batter and fold through.
Spoon the batter into a prepared tin (I used a round glass dish) and level out.
Put the flour in a small dish and rub the butter in using your fingertips, add the sugar and mix until you have a mixture resembling breadcrumbs.
Sprinkle the crumble topping evenly over your cake and bake at Gas Mark 4 (350f / 180c) for 50-60 minutes. The cake is ready when a skewer inserted into the centre comes out clean and the top is golden brown.
Remove from the oven and allow to cool in the tin for 20 minutes. Run a knife around the outside of the cake to loosen then tip out and finish cooling (the right way up) on a wire rack. Slice and serve!

This crumble will look great whatever you cook it in, but if you are in need of a new dish, here’s a few ideas. How to serve your cake
If you can, I would try and wait for this to cool down to allow the flavours to develop and the cake to firm up a bit. Eat with your favourite cuppa and your feet up! You could add some ice-cream or custard on the side… or both! Or even if whipped cream is your thing, add that too! I would serve this as dessert, or afternoon tea and whilst you’re in the kitchen, you could make these decadent biscoff brownies too!
Is the cake easy to store?
This cake keeps best in the fridge and will be good for at least five days (if you can keep it for that long)! Whilst it can be frozen for up to 3 months (remember to wrap it well, label and date) it will be more pudding like when defrosted (best served warm). If you are eating this the same day, it is fine just to leave it out (covered) on the worktop!

Combining the best of both worlds! I actually baked some apples with crumble topping the other day lol, after I received a package from my mum containing packs of instant custard haha (I prefer the original powder though). We often have ‘crumble cake’ but bought from the bakery😋I plan to make a batch of your mincemeat this weekend…I hope I’ve got all the ingredients 😊

Oh yes, I’d forgotten your tip about the cornflour (the ‘white custard’)👍 Funny thing is, I never even asked for custard and we don’t even eat it that often😄 It’s getting very chilly here, 1′ during the day next week! We’ll probs go for a bracing walk along the now bare vineyards. I also plan to put up the few bits of festive decorations I have…and hopefully get around to making some mincemeat 😋x

It sounds nice, Laurena. Will be great with coffee or tea. I find myself reaching for my second cup of coffee by mid-afternoon these days. Being forced to stay home somehow makes me sluggish and sleepy 😀 Plus, it’s starting to be cold here.
