Magic yourself more time with this delicious 2 ingredient soup!

Time.

This time of year there are so many things to be getting on with that sometimes everyday food almost gets forgotten! There are cards to write (oops)! Presents to buy. Decorations to put up. Invites to respond to. Nativities, concerts and pantomimes to attend! Or maybe assignments to finish and exams to take. There are travel plans, dinner menus and guest rooms to prepare.

Make Time!

Of course, it is very important to prioritise your time and make sure you are looking after you! This recipe will hopefully free up some time so you get an extra half an hour to yourself!


The Soup Recipe

This is probably one of the easiest soup recipes ever! You just need butternut squash (or pumpkin) and coconut. Of course, there is some liquid needed – just water is great, although if you feel the need to use milk or stock, then please do. You can season with salt, pepper, spice or herbs if you wish, but this recipe will still taste great without.

Gather
  • 1 medium butternut squash (or any pumpkin/winter squash)
  • 1-2 tablespoons coconut (desiccated, flakes, chunks)
  • 1-2 litres water (or milk/stock). NB: if using boiling water be sure blender is safe
  • *optional nutmeg, chilli flakes, salt, pepper
Prepare
  1. Wash your squash, chop it into large chunks (around 8 pieces), place on a (lined) baking tray and cook on a medium to high heat for 30-50 minutes. (Alternatively place in an air fryer and cook for 15-30 minutes).

  2. Carry on with your day! When the squash is soft, use a large spoon to separate the squash from the skin. No judgement here if you want to nibble the last bits! Place the squash in a blender or food processor, add the coconut and cover with water.

  3. Pulse the mixture, then gradually increase the speed and process until smooth. Add more water if required until the soup is the required consistency. Taste test, season if needed. Check the temperature (if you used hot water this should be ready. If your blender has a soup function, process until hot, otherwise heat in a pan).

  4. Soup is ready. Enjoy!

Serving

Serve your soup as it is in a bowl or even a mug. Have it plain or add your favourite soup toppings. You could make some tasty bread to go with it too.

Storage

This soup will store well in the fridge for up to five days or in the freezer for up to three months. If freezing, portion then label and freeze. To reheat you can pop it in a pan on a low heat and cook until hot (you may need to add a tiny bit more liquid).
