Avocado.
Guacamole is something we make quite a bit at home, often without a recipe, just adjusting as we go until it tastes delicious. You might be thinking, but avocado? Yes, as much as I love guacamole, I am definitely a marmite on my toast kind of girl! To me, an avocado should only be eaten mixed with something else! If you’re an avo on toast fan, great, but for me, guacamole is one of the only ways I will eat this fruit.
The Guacamole Recipe.
I am just going to give you some tips here, rather than a prescribed recipe! Obviously you need an avocado! Then, you need fresh lime (or lemon will do), salt, onion, tomato, chilli. Sometimes I add cucumber too.
Start by carefully cutting your avocado in half, twisting it to separate the halves, then removing the stone. Scoop the flesh into a bowl and mash the avocado with a masher, or a fork. Squeeze in some lime and add a sprinkle of salt. This is the simplest version and you can leave it like this or add a few more ingredients. Finely diced red onion and or diced tomato and the juice is a great addition and makes the taste less avocado-ey! You can add in some diced cucumber too, or even diced red peppers. If you like spicy, add in some fresh chopped chilli or just some red chilli flakes. As I love freshly ground black pepper, I always add a sprinkle of that too! If you have fresh coriander, feel free to chop that and mix that in too. Taste it, adjust the seasoning, add a bit more of this or that. Serve!
Avocado Tip
A little known avocado tip for you! To check the freshness of an avocado, look at the top where the stem used to be. The avocado should have a little remnant of the stem. If you remove this little brown dot from the avocado, you can see the colour of the avocado inside! Remove it and see bright green, then your avocado is probably still quite firm and underipe. See yellowy green under the stem and I would say this is perfect for your guacamole. Remove the stem and see brown and your avocado has gone past ripe. If you’re shopping and see avocados without the stem piece, then someone before you was looking for the best!

You can (as with most of my recipes), make this guacamole as easy or as complicated as you wish! I have given you some tips to help you create something quick and easy to suit your tastes.

Serving
We usually serve guacamole with a bowl of tortilla chips, along with some homemade salsa, or have it on the side with our enchiladas. Sometimes we top our fries or sweet potato fries with guacamole and off course, we love making nachos and load up our chips with the guacamole, cheese, beans, salsa and sour cream. Yum!
Storage
The guacamole will store in the fridge for a day or so, but the avocado will likely discolour quite quickly. I would suggest making the amount the need and eating it fresh.
