Meat(less)balls!

Meat(less)balls!

Well! I got told off for calling them ‘meatballs’ so I thought okay, meat(less)balls they will be! We’ve made these before but this time switched the recipe up a bit and they were oh so good! I’m not writing too much this week as I’ve been busy working on the new site and hopefully I will repost this over there this week!

I’m sure you’ve all been bombarded with GDPR ( data protection) emails and as I’m moving my site anyway, I thought I’d set it up over there for followers instead of deleting you all here and getting you to re-subscribe! That’s the plan anyway! But my week already really hasn’t gone to plan!!! I’m hoping it will get better as the week goes on, but as you might realise, this post is already late going out!

Less talking, more delicious recipe-ing! Okay, these are bitesize morsels packed with flavour, great in a wrap (errr, we ate them before we took photos of that)! They’re fantastic with pasta and sauce, or with rice as you can see here! They’re great freshly cooked, but delicious cold the next day too – so they’re ideal picnic food (if you’ve the weather and you’re not fasting for Ramadan)! They are a bit time consuming to prepare initially (unless you’re a dicing ninja)! but they are oh so worth it AND as these meat(less) balls are quite ‘meaty’ 😛 they’re great for meat-eaters too! Hurrah! 😀

Meat(less)balls (Vegan & Free-From)

  • Servings: 20-30 balls
  • Difficulty: medium
  • Print

Gather

  • 2 medium aubergines
  • 1 medium red onion
  • 3 garlic cloves
  • Oil of choice (I used a mix of coconut & olive)
  • 2 medium slices of bread made into crumbs (gluten free/rye/brown/white)
  • Salt to taste (I used pink Himalayan)
  • Black pepper
  • 1 teaspoon Italian herb mix
  • Pinch of red chili flakes
  • *3 tablespoons nutritional yeast (optional)

Prepare

  1. Cut the aubergine into very small dice (approximately 0.5mm square). Do the same with the onion, then roughly chop the garlic.
  2. Heat/melt the oil, then add the aubergines and stir for a couple of minutes. They will start to shrink and turn translucent. Add the onion, cook for a further couple of minutes, then add the garlic. Cook until everything is starting to turn golden.
  3. Stir in the breadcrumbs, followed by the salt, pepper, herbs, chili and nutritional yeast (I would definitely recommend adding this).
  4. Stir to combine, then remove from the heat.
  5. Make the mixture into pingpong-ball-sized or smaller balls and leave to rest whilst you prepare them all. You may find it easier to work with damp hands.
  6. Lightly fry the meat(less)balls on all sides (I’d suggest doing in small batches) then move onto a baking tray.
  7. When all the meatballs are cooked, bake in a medium oven for 10-20 minutes.
  8. Enjoy!

Tips & Storage

  • Delicious hot fresh from the oven – with pasta, rice, vegetables
  • Put in a wrap, pitta, or sandwich
  • Use to top a salad, maybe with coleslaw
  • Take on a picnic, maybe with some houmous
  • Store refrigerated for up to five days
  • Eat cold every time you open the fridge! oops no, that’s just me!

Oh but Eva… you might be surprised! Or, how about you make them, divide the mixture and add some minced beef to theirs! Win-win – you all get a tasty dinner! 😀 I’m good thanks – you? Have you settled back in now to the UK?!

That’s a good idea?Just as we’re settling back, it now looks like we may be going to Germany after all (can’t remember if I’ve mentioned this before)- hubbie was offered a job a while back but we didn’t think anything would come of it! All change again, lol. Have a nice weekend x

Germany seems to be popular lol. We’ll be going to Wiesbaden, all being well. I can’t imagine it at the moment, I guess I’ll have to get used to it soon! I was fluent in German back in 2000, hopefully I will get most of it back haha. Enjoy the long weekend too?

          • Life Diet Health 27th May 2018 at 08:59

Oh wow… fluent in German! I did a bit at college – a long time ago, but it was business German so I can say ‘useful’ things like ‘can I use the photocopier?!’ and ‘let me introduce you to…!’ but not ‘How much is this?’ or ‘Do you have anything vegetarian?!’ Lol! 😛 I’m sure it will come back to you once you start hearing it again! Hope you’re enjoying the sunshine! 🙂 x

That sounds more useful than writing an essay about German expressionist cinema lol?As for the weather, I welcomed the rainy weather today! Yeah, I know I’m in the minority hehe. Hope you had a lovely Bank Hol weekend?

German expressionist cinema??Yes, I’ll take the business German I think! Oh… Rain? We’re still waiting for it!!☔️?

          • Eva Gallon 29th May 2018 at 21:01

The rain’s been practically non-stop here in the southeast these past 24 hours, hopefully you’ll get some soon (for your veggies at least) if you don’t like the rain per se?

          • Life Diet Health 29th May 2018 at 23:44

Wow… That’s a lot of rain! It’s just started here and my vegetables and fruits will be so happy! ???I hope I can get some sleep though – it’s battering down very hard! Trying not to think of all the new weeds that will inevitably spring up!!!

          • Eva Gallon 30th May 2018 at 16:20

I adore the sound of rain at night (even thunder sometimes!) Yes, I’m sure your produce has benefitted from it… You must be very busy, raising a family, working, blogging and growing your own stuff lol… Very well done, defo putting me to shame haha?I was on auntie duty the whole day yesterday and have a newfound respect for parents!?

          • Life Diet Health 30th May 2018 at 16:23

Thank you – always busy… or busy relaxing! 😛 Lol… Auntie Eva can I…? Auntie Eva I want… Auntie Eva but why…? Auntie Eva it’s not fair! I’m sure you had loads of fun though! 😛

          • Eva Gallon 30th May 2018 at 16:29

That’s exactly how it was lol, and we even tried some (very) amateur tap dancing?

          • Life Diet Health 30th May 2018 at 22:44

Ooo… I used to do tap when I was first at uni- sounds like you had a busy day!

          • Eva Gallon 31st May 2018 at 14:21

Tap at uni? That’s a new one for me lol. I bet you fared better with it than I did when I was around 5 and didn’t like it all! We recently watched the ’42nd St’ musical with loads of tap dancing, maybe that inspired me☺

Hmm well… I loved it but went home and tried it out on the newly varnished dining room floor!!!
