N = Nutrition!

Hello all! I hope you are enjoying some lovely weather like we are! πŸ™‚

Today my post for the A-Z Challenge was going to be N = Nothing! πŸ˜› πŸ™‚ I’m a tad busy to be in the kitchen and IΒ was going to write a post around nothingness! Then I thought I’d tell you about my latest Nutrition news instead! πŸ™‚

I’ve almost completed my dissertation for my higher international diploma in nutritional therapy (woohoo) but not to be one sitting around I have decided to do another accredited course (also in nutritional therapy). I’ve already completed two modules which is about a sixth of the course πŸ™‚ Feel free to offer your encouragement and ask any questions which I can do my best to answer! πŸ™‚

Nuts or Nachos. They were my other options for today! πŸ™‚ Nuts because they are a fantastic source of vegetarian and vegan protein and contain vitamins, minerals, antioxidants and omega 3’s πŸ™‚ Nuts can be used in all sorts of foods and are often minced, chopped, roasted, blended or baked into savoury OR sweet dishes.

Try: Cashew Cheese. Soak cashews in water for at least 2 hours (overnight is best). Rinse. Add a bit of liquid and blend. Flavour with salt and spices to your liking. Delicious!

Nachos… to add your cashew cheese to! Look at these delicious nacho style potatoes!

    Oh my, I would be scared to be around those nachos. After a short while, there would be no nachos left! πŸ˜› I am truly impressed how do you make time for your courses, A-Z challenge, your family… The day lasts 24 hours in the UK, too, right?! πŸ˜‰

Straight though… no sleep lol! well maybe a bit… cos that wouldn’t be healthy right! πŸ˜› It’s called time management (which has gone out the window a bit the last week) but I’ll be back on track soon! (Hence my delay in responding!) πŸ™‚ And the nachos were SO yummy!!! πŸ™‚

    My tummy is rumbling just by looking at those nachos! πŸ™‚ Does time managements comes naturally to you or many to-do things on your schedule stresses you out? I find that, when I have too many things to do and something unexpectedly comes up in midst of all that, I really get stressed. I like to take it easy, hence the dream of the forest! πŸ™‚

      I guess my management training played a part somewhere along the line and a series of books called the 5 minute manager! πŸ™‚ I’m a list person (I have post-its everywhere) and have learnt to take everything in my stride including adapting and changing as necessary πŸ™‚ I’ll look for the quote about worrying too as that helped me a lot with sorting extra stuff out! πŸ™‚ Ooo.. I could do W = Worry That’d be different! πŸ˜€ x
