So simple but so delicious! Have them for breakfast, snack or dessert.
You can add as many layers as you like (or that fit in your pot)!
The spice I have used is cinnamon as this pairs so well with apple, but you could also used mixed spice, nutmeg or even ginger to suit your own tastes.
It is important not to cook the apple too much – you are not making compote, and the apples still need a bit of bite to them.
I have used plain oats which soak up some of the liquid, but you could use granola if this is more your thing.
As you might have noticed from the background in the photos, we are not at home! We are in the middle of a valley in Wales. It’s so quiet and peaceful here. Wifi is only in one spot… literally! There are sheep, cows, squirrels, rabbits and so many birds I can’t actually count them! There are a pair of Jays who hop then fly away as soon as I get the camera anywhere near them, so many Great Tits, Blue Tits, Chaffinches and very bright chested Robins too!
Here’s a quick recipe for you… quick because firstly, I am on holiday and secondly it’s taking far too long for the internet to even think about letting me do what I want!
- 2 medium apples peeled, cored & diced
- 50 ml water
- pinch of cinnamon (or other spice of choice)
- 20 g oats
- 70 g plain yogurt (or vanilla)
- sweetener of choice to taste if required

Put the apples in a shallow saucepan with the water and cook until just soft. Sprinkle the cinnamon over and gently mix in. Do a taste test and add sweetener if required. Set aside to cool.

In a glass or pot, sprinkle a layer of oats at the bottom. Then add a layer of apples. If you want to see the layers then be more careful with your layering. If not, just layer away. Cover the apples with yogurt, then repeat.

You can be decorative with the final layer (to make it look pretty), or just add fill the layer up.

Either, eat immediately or allow the oats to soften slightly by placing in the fridge until required. Enjoy!
