You will love this easy quick chocolate dessert!

Oh yes! you are really going to love this dessert! ?

It is chocolatey, chocolatey and chocolatey!

You could probably make it right now actually as the ingredients are simple and unless you’ve banished everything chocolate from the house? Seriously? Who does that?! then you could be sitting down enjoying this in less than ten minutes! Yes! Delicious chocolate dessert for breakfast lunch or dinner! 😛

How could you resist this chocolate pudding?!

Okay, so the main ingredients in this are milk (the creamier the better) – plant based of course – we used a frothable (is that a word?) oat milk, cocoa powder, cornflour (making this gluten free) and sugar. Optional extras are chocolate and vanilla, or a dash of something alcoholic if you’re whipping this up for guests (or not)! 😛 Here’s the recipe!

Chocolate Pudding

Ten minutes or less is all you need to have delicious homemade chocolate pudding! Vegan and gluten free too!

Gather
  • 500ml + 50 ml milk (we used creamy oat milk)
  • 2 tablespoons cornflour
  • 1-2 tablespoons cocoa powder (depends how strong in flavour it is)
  • 2-3 tablespoons sugar (choose your sweetness)
  • *50 g chocolate of choice (grated or finely chopped) (optional)
  • *1 teaspoon vanilla (optional)
  • to serve fruits, biscuits, grated chocolate, nuts
  • *1 tablespoon alcohol of choice (optional)
Prepare
  1. Heat the 500ml of milk in a large pan until it just starts to bubble.

  2. While the milk is heating, mix the cornflour, cocoa powder and sugar together in a heatproof bowl, then add in the remaining 50ml milk (and vanilla/ alcohol if using) and mix to a smooth paste.

  3. When the milk is heated, very carefully pour it into the chocolate paste and stir a couple of times. Now, pour the mixture back into the saucepan, put on a low heat and stir continuously until it thickens. If you are adding extra chocolate, add it as soon as you put the mix back in the pan so it has time to melt before the pudding is ready.

  4. Remove from the heat and pour into individual dishes/ramekins. Gently tap the dish on the table to settle the top. Allow to cool or eat immediately. Can be made in advance, cooled, covered and refrigerated for up to 5 days.

  5. Serve with fruits, biscuits and nuts. Decorate with grated chocolate (once cooled) or crushed nuts before serving. Enjoy!

We’ve got a busy weekend with guests over so there will be lots of baking going on! We have already had a request for bread rolls – I wonder if we could just get away with those! 😛 Okay, maybe not! We will of course have to make a cake or two – I’m thinking of adapting this coffee cake into a chocolate or vanilla version and I’m still trying to work out a teenage boy approved way to decorate them! Any ideas?
