Announcing the tastiest tomato toast breakfast recipe everyone will love

Are you a samey person? That is, do you tend to stick to what you know (& may or may not love) as it’s easiest? Well, why not have a look at this? I’m announcing the tastiest tomato toast breakfast recipe everyone will love!



Sure you can have loads of things on toast, but the humble tomato often gets overlooked! Okay, so I generally have porridge for breakfast, but I do mix up the toppings!

The Tomato Toast Recipe

Many people will say a good bread makes the best toast, but with this topping you can transform any bread into the most amazing breakfast, brunch, lunch or snack! Any tomatoes will do, even ones which are past their best. You can use salad tomatoes, beef tomatoes, plum tomatoes or cherry tomatoes. Red, yellow, black or even green tomatoes. Then you need fresh garlic, fresh rosemary and a good balsamic vinegar. This tomatoes on toast recipe is really simple, but incredibly delicious. Check out the recipe.


Tomato Toast

Gather
  • splash of oil of choice
  • 3 medium tomatoes cut in half from top to bottom through the core
  • 1 whole bulb garlic (or 3-4 garlic cloves) thinly sliced, then chopped
  • 1 fresh sprig rosemary removed from the stalk
  • 1 tablespoon balsamic vinegar
  • 2 slices bread (toasted)
  • butter of choice (for toast)
Prepare
  1. First prepare all your ingredients and get the bread ready for toasting.

  2. Melt or heat the oil and put the pan on a medium to high heat (I use a non stick pan with a few sprays of olive oil), then place the tomatoes cut side down in the pan and cook for 1-2 minutes.

  3. Gently flip the tomatoes over then add the garlic and rosemary to the pan on top of the tomatoes. Allow the garlic and rosemary to sit on the tomatoes for a few minutes, then turn the heat down and move the tomatoes to one side.

  4. Push all the garlic and rosemary together, then drizzle the balsamic vinegar over them. Cook for a minute, then stir. You wnat the garlic just changing colour to golden brown. Turn off the heat, but leave the pan there.

  5. Toast your bread, spread with butter, then place 3 tomato halves on each slice and scatter the garlic and rosemary over. Add pepper (& salt) if needed.

  6. Enjoy!

What do I need?

You can make this recipe as easy or complicated as you wish! I have created this recipe using fresh produce, but you could just as easily use tinned tomatoes, dried garlic and dried rosemary or a combination of whatever you have. If you’ve no balsamic, try a splash of soy sauce, Worcestershire sauce or Tamari instead! You could also spread your toast with a cheese spread, or even pesto (or a mix of the two).

Serving your tomato toast

Cook the tomatoes just before eating and serve hot. You can serve your toast however you normally eat it! Thick, thin, sourdough, granary, white, gluten free, piping hot with melted butter, or cold and crunchy (or even just serve on sliced bread)!

Storage

I have not tried storing these as they are so quick to make that they are best made and served immediately. If you do have any left over, they should store for a couple of days in the fridge (cover so the garlic smell is contained) and reheat quickly in a hot pan.
