Banana Bread

Well. This was an unexpected delight!

When I logged in to my Instagram yesterday, I saw Banana Bread Challenge! Well, I love a challenge and I love Banana Bread! So… as I had nothing else pressing to do except sit in the garden 😛 I took up the challenge and invented this delicious new recipe!

It’s good! Much easier ingredients than my previous banana bread recipe on here and different to the banana muffins recipe. There isn’t much left! Like really not much left! 😛 Oh well, it was all in aid of charity! 🙂

Banana Bread

A moist light banana bread, studded with sweet juicy dates with a crunchy sugared topping.

Gather
  • 1 tablespoon ground linseed / flaxseed (or 1 egg equivalent)
  • 3 tablespoons water (to mix with the flax)
  • 300 g bananas (approximately 3 medium) Plus extra for decorating if required
  • 50 ml oil (I used olive oil)
  • 80 g sugar (I used a mix of brown & white)
  • 1 teaspoon vanilla extract
  • 210 g plain flour
  • 5 teaspoons baking powder
  • 1/2 teaspoon bicarbonate of soda
  • 3 teaspoons cinnamon
  • pinch of salt
  • 90 g chopped (destoned) dates (the softer the better) plus a bit of flour for dusting
Prepare
  1. Mix the flaxseed with the water and set aside to thicken.

  2. Mash the bananas in a large mixing bowl until you have a lumpy puree.

  3. Stir the oil and the sugar into the bananas. Add the vanilla to the flax and add this in too.

  4. Add the flour, baking powder, bicarbonate, cinnamon and salt and gently mix in until everything is combined.

  5. Dust your dates with a sprinkle of flour, then fold them through the cake batter.

  6. Spoon into a lined or greased loaf tin and gently tap the tin on the worktop to make the cake level. Decorate with extra banana if desired and a sprinkle of sugar (brown is best for this). Bake at Gas Mark 4 (350f / 180c) for 50-60 minutes. The cake is cooked when it is pulling away from the sides of the tin. Allow to cool in the tin for at least 30 minutes, then remove and finish cooling on a wire rack.

Anyway, there is another challenge I’m contemplating now… it’s called the 2.6 challenge! As it would have been the London Marathon this Sunday (26 April) then the challenge is on to do something for 2.6 (or 26) miles or minutes or times! So, for example you could walk 2.6 miles, spend 2.6 minutes hula-hooping (that’s harder than it sounds)! do 26 keepy-uppys, ooo, maybe I could bake 26 cakes! 😛 Who wants to join the challenge? Drop me a line below to give me some more ideas! It’s for charity of course but don’t feel you can’t join in if you can’t donate at the minute! I’d love to know what you decide to do! 🙂
