Jammy Flapjacks.

This delicious recipe was created as I just wanted something different! Do you ever get that feeling when you have no idea what you want to eat? I just wanted something sweet, easy to make and suitable for everyone, hence, this delicious jammy flapjack was created. This recipe can be dairy free, gluten free and vegan so it’s a great recipe to keep handy!

The Flapjack Recipe

The main part of this recipe uses standard flapjack ingredients of oats, golden syrup and butter. You may notice there is sugar missing but the addition of jam in the centre makes these the perfect sweetness. I have used a mixed berry jam – strawberry and raspberry with more fruit, less sugar, but just use your favourite. The last main ingredient in these is flaked coconut – you can miss this out but it gives a lovely flavour and an additional texture.

Gather
  • 150 g butter (I used Vitalite)
  • 125 g golden syrup
  • 250 g oats (porridge, rolled. Gluten free if required)
  • small pinch of salt
  • 2-3 tablespoons red jam (strawberry, raspberry, plum, mixed)
  • 1 tablespoon flaked coconut
  • *1 teaspoon sesame seeds (optional)
Prepare
  1. Firstly, prepare a shallow loaf tin by lining with greaseproof paper (or use a silicon tin).

  2. Put the butter and syrup in a sturdy saucepan and gently heat until melted. Turn the heat off.

  3. Add the oats and salt and stir well (a wooden spoon is best) until everything is combined.

  4. Pour half of the flapjack mixture into your tin and level out with the back of your spoon. (A dampened metal spoon is useful here so the oats stay in the pan rather than stick to the spoon)!

  5. Dot the jam over the flapjack and roughly spread it out to cover all the flapjack.

  6. Sprinkle your coconut flakes over the jam, spreading them out evenly.

  7. Place the remaining flapjack mixture over the coconut and spread out using your metal spoon ensuring all the jam is covered.

  8. If using the sesame seeds, sprinkle these over and gently press in using the back of your spoon.

  9. Bake on the top shelf of the oven on Gas Mark 4 (350f / 180c) for 20-30 minutes (depending on your pan size). The flapjack is ready when the top and edges are golden and the sides are slightly pulling away from the pan.

  10. Allow to cool in the pan for about half an hour. Carefully remove the flapjack from the pan and place on a cooling rack. Remove the paper before the flapjack is fully cool.

  11. Cut into squares or slices. Enjoy!


What do I need?

You can (as with most of my recipes), make these as easy or complicated as you wish! I have created this recipe to be a quick and easy bake whilst being a bit different!

Serving

You can serve these just as they are with your favourite cuppa! They would also be great with a bit of cream, ice cream or even custard on the side (I can still hear my late Dad saying ‘yes please’ rather than choosing one side over the other)!

Of course, you could make these as part of an Afternoon Tea or Coffee morning. These jammy flapjacks would go great alongside my decadent biscoff brownies, a Coffee Cake, or shortbread.

Storage

These do store quite well just loosely covered on the worktop. If your house is hot, you may want to store these in the fridge, especially if you like to keep the crumbs intact! They will easily store for up to five days whichever you choose. These can also be frozen, but bear in mind they may be crumblier when defrosted. If freezing, portion or separate with greaseproof paper, label and freeze for up to 3 months. Defrost for a few hours by placing them in the fridge.
