Sticky Toffee Pudding

My Dad loved hot desserts and sticky toffee pudding was one he would often choose. If you read my blog last week, you will know that my Dad has recently passed away. This recipe is one I’ve tweaked slightly from the last sticky toffee pudding I made my Dad but one I’m sure you’ll agree that everyone will love.

Most hot puddings remind me of my Dad, like this apple crumble slice or creamy rice pudding , even these baked apples which remind me of time spent picking and storing apples with Dad. In this freezing cold weather which has suddenly descended on the UK, these hot puddings are a comfort in more ways than one.

More than the usual dusting of snow!

If you want a stickier or stodgier pudding, just make a thinner runnier syrup and make sure you pour it over the puddings as they come out of the oven. If you like a lighter pudding then follow the recipe as it is and go easy on the sauce.

We’ve spent the past dozen days reminiscing, sharing stories, looking at photos and re-watching family video clips. There is still disbelief that this wonderful man left us suddenly without notice, but also relief that he didn’t suffer more than necessary. Sticky Toffee Pudding (Vegan & Free-From)

Gather

  • 100ml aquafaba
  • 2 teaspoons apple cider vinegar
  • 75g coconut sugar
  • 65g soft dates (destoned)
  • 50g coconut oil melted and cooled
  • 100ml coconut milk
  • 1/2 teaspoon vanilla
  • 150g flour (gluten free if required)
  • 50g brown rice flour
  • 50g ground almonds
  • 2 teaspoons baking powder
  • 1 tablespoon ground linseeds
  • pinch of cloves
  • 1/2 teaspoon ginger
  • 1 teaspoon mixed spice
  • 1/2 teaspoon Maldon sea salt
  • 20g dates finely chopped
  • 20g coconut nectar
  • 300g (vegan) condensed milk

Prepare

  1. Whisk the aquafaba until soft peaks appear. Add the apple cider vinegar and continue whisking until stiff peaks form (mixture should stay on whisk when lifted).
  2. Add the coconut sugar and whisk until combined.
  3. Blend the dates with the oil, milk and vanilla until you have a smooth paste. Add this to the aquafaba mix and gently mix in.
  4. Mix the flours, almonds, baking powder, linseeds, spices and salt together then lightly fold into the batter.
  5. Dot the batter with the chopped dates and drizzle with coconut nectar.
  6. Spoon the batter into prepared muffin tins (I made 9) and bake at Gas Mark 5 (375f / 190c) for 20-25 minutes.
  7. Remove from the tins and place on serving plates.
  8. Using a fork or a skewer, poke several holes into each cake.
  9. Gently heat the condensed milk until just changing colour, then pour over the puddings.
  10. Enjoy!

Tips & Storage

  • You can add more chopped dates or coconut nectar if you want a richer cake.
  • Use your favourite toffee or caramel sauce recipe.
  • Thin the condensed milk with some milk or water for a thinner sauce.
  • Serve with custard, ice-cream or cream.
  • Change the spices – omit the ginger and use cinnamon instead.
  • Store the muffins without the sauce in a covered container.
