The sun is shining, it is the school holidays and not much cooking is going on here!
We’ve been munching on watermelon slices, watermelon cubes and watermelon pizza! ๐ We’ve made watermelon smoothies and watermelon cocktails! We’re fortunate that we have several Asian Supermarkets nearby and they stock the tastiest, biggest watermelons that would probably be too oval and too heavy (think 13-15kg) for the standard UK supermarket. So, watermelon is most definitely a great thing to have on our menu at the minute! ๐
So, somewhere, on my laptop are some great watermelon photos… can I find them? Of course I can’t! They are somewhere neatly in a folder within a folder, probably within another folder… but what that folder is called is beyond me! I have looked! I’ve looked on my back up drive too! One day I will find them and then I can show you, but for now you need to visualise a melon cut in half width-ways, all scooped out, seeds removed, blended with some mint, lemon and apple juice, then poured back into the watermelon shell and decorated with shapes of watermelon (stars I think, or maybe hearts?)! and my lovely bamboo straws! You could off course add a glug or three of your favourite alcohol in there too – gin would work (little sis!) or a dry white wine or vodka!
You know, I never used to like watermelon! I couldn’t see the point! Now, I totally get it! I prefer it ice-cold though, and chunked not sliced, I’ve even been known to freeze it to get it extra cold! ๐
Watermelon is a quick and easy snack… much better than reaching for cookies or ice-cream (although this peanut butter swirl ice-cream is okay ๐ !) Watermelon contains Vitamin C, Vitamin A, Potassium, Magnesium and Antioxidants as well as Vitamins B1, B5, B6, Copper and Iron too! ๐ and the fact that it tastes delicious makes it the perfect summer snack or breakfast or lunch or dinner! ๐
Just look how juicy and delicious it is! ๐
Oh and look what some very clever people can do to it…
So, time to go and buy another watermelon and see if it will fit in the fridge! We have a big American style fridge/freezer but we still have to eat at least a third of the melon before it is even going to attempt to fit on the widest shelf! ๐

I love watermelon, but I can only eat a piece or two. I usually make watermelon lemonade or just blend watermelon with mint – ahhh so refreshing! Hi Laurena, I couldnโt believe my eyes when I saw how beautiful my plate looks filled up with watermelon! Your hands can do magic….whether youโre cooking, arranging food on a plate or taking photos of it!
We do love watermelon, so cooling and rich of precious minerals and water….I usually buy baby watermelons (storage problems in the fridge), but I definitely want to buy a big one, theyโre much tastier!
Never tried it with mint though, so Iโll give it a try!

Thank you so much! ๐ Ahhh, I keep trying with my food, photos and arrangements! ๐ Baby watermelons definitely fit better in the fridge! ๐ But if you chop a large one in half and eat a good chunk it should fit!
