Superfood cookies

Oh if you could see where I am!!! It’s so quiet, so peaceful, so tranquil… just the sounds of sheep bleating and water trickling down the stream. On Sunday, we managed to be out nearly all day and not see a single soul! There are mountains and waterfalls and lots of sheep! Sheep on the mountains, sheep in fields and sheep on the roads!!! Any idea where we are?!

So, we are on holiday, staying in a remote cottage – the nearest shop is 20 minutes drive away! There are so many little birds fluttering around the grounds of our cottage and lots of birds of prey flying overhead… it’s so lovely here!

As I’m on holiday I’m not really in the kitchen (although it is one of my favourite places), but I did manage to whip up these delicious cookies to have on hand as an easy to carry energy boost! I didn’t have scales or proper measuring spoons so these are adjustable measurements. What I did have though were some lovely superfood powders (bought with a half price voucher) which are: ‘goldenberry, turmeric and coconut’ and ‘acai, sacha inchi and coconut’ and then a plain blueberry powder.

I have used these in my cookies, but you could use any superfoods or if you really don’t have any, add something for flavour such as nut butter, cacao, choc chips, raisins or nuts! I have also added a pinch of psylium husk – this can be omitted but just gives a firmer texture to the cookies.

Superfood Cookies (Vegan & Free-From)

Gather

  • 1 medium-large banana
  • 1 tablespoon coconut oil
  • *1 teaspoon turmeric superfood powder
  • *1 teaspoon acai superfood powder
  • *pinch of blueberry powder
  • *1/2 teaspoon psyllium husk
  • 1 mug oats (gluten free if required)

Prepare

  1. Mash the banana in a bowl with the coconut oil.
  2. Add your *optional superfood powders (or nut butter/cacao/nuts/raisins).
  3. Sprinkle the *psyllium husk over (if using) and mix well.
  4. Make into small rounds, gently flatten and place on a greased baking tray.
  5. Bake at Gas Mark 5 (375f / 190c) for 10-15 minutes (they should be turning golden around the edges).
  6. Allow to cool slightly before eating.
  7. Enjoy!

Serve & Store

  • Store at room temperature covered for up to five days.
  • Add different superfoods, fruits, nuts or seeds.
  • Try dunking into your favourite hot drink.
  • Drizzle melted chocolate over the cookies.
  • Have as an energy boosting snack.
  • Pack on a picnic, in a lunchbox or an on-the-go snack.
  • Use instead of breakfast when you’re too lazy (or busy) to make anything else!
