Chocolate.

Today as this is typically known as Easter week, I had great plans of sharing some chocolate recipes with you… but I might have eaten everything I made before they saw the camera!

Instead, I will give you a very quick easy and tasty recipe for some nutty chocolate truffles!

The Chocolate Truffle Recipe

You need your favourite milk or dark chocolate and some nut butter. I used a homemade vegan milk chocolate recipe and natural peanut butter, but choose your own. You can use almond butter, hazelnut butter, peanut butter, even pumpkin seed butter. Make sure the nut butter you choose is relatively firm at room temperature. You can use all plain, all milk, or a mixture of chocolate. This is a great way to use up all those little bits of leftover bars or even the last pieces of chocolate eggs.

Gather
  • 100 g nut butter (peanut, hazelnut, pumpkinseed etc.)
  • 100 g plain or milk (vegan) chocolate (or a mix)
  • *extra chocolate for dipping
  • *optional toppings crushed nuts, cocoa powder, coconuts
Prepare
  1. Put the chocolate in a heatproof dish and melt (I used the air fryer, but you can use the bowl over a pan of water method, or the microwave if you watch it carefully).

  2. When the chocolate has melted, stir the nut butter in and mix well. Set aside to cool.

  3. If you are coating your truffles in chocolate, prep a space for dipping and placing the truffles.

  4. Get your toppings or cocoa ready for rolling or topping.

  5. When the choc nut mix has hardened slightly, scoop bite size amounts out and roll into balls. Repeat until they are all done. Wash your hands.

  6. Roll the truffles in chocolate if you wish. You can double or triple dip these if you want a thicker shell, just wait for the chocolate to harden a bit first.

  7. Sprinkle or roll in nuts, coconut, grated chocolate or cocoa.

  8. Allow to set. Enjoy!

What do I need?

You can (as with most of my recipes), make these as easy or complicated as you wish! I have created this recipe to be very simple, but if you wish, you can create a chocolate shell and fill with the truffle mix. Here are a few seasonal items which you might find useful. Serving

I am sure this is something you already know! Serve them anytime you like! Wrap them up and give them as gifts, put them in boxes, or bags. Display on a plate, in a nice bowl. Eat for Easter breakfast! Have as a snack, a treat, use for an Easter Hunt. Enjoy!


Storage

These store really well, especially if the temperature is kept relatively constant. They are happiest at room temperature and can be loosely covered (kitchen roll, or a lid) or left open. They should last as long as you can resist them! At least 2 weeks depending on what you topped them with.
