Win their heart this Valentines – make perfect cookies!

You can do this! You need to do this! This is the perfect recipe, which makes perfect cookies, perfectly easily! Perfect! 😀 Well, you wouldn’t want anything less than perfection for your Valentine or Galentine would you! 😛

This a plant based shortbread recipe which can be customised to your liking with different shapes, different fillings, left plain, sprinkled with sugar, or cinnamon sugar, ?a dusting of cocoa, a drizzle of chocolate, a handful of chopped nuts or a mixture of them all!?

The hardest part will be not eating them all before you gift them! ?

The menfolk in my life absolutely love cookies! This week we’ve had crisp but gooey chocolate chip cookies, smarties cookies, and a double batch of these shortbread cookies.

There are non left at all of anything! I wonder, if they might make these for me (hint hint)! I remember hubby making me cookies once as a surprise! Once that is! That was a hint in a blog post too! 😛 Anyway, I will probably end up making another batch myself for Valentines, although Angie gave me an idea which I might do instead! We’ve been making pretzels recently (recipe will come soon)! and Angie has made hers into Valentines pretzels – amazing!

Shortbread Cookies

Delicious vegan shortbread perfect for a Valentines gift!

Gather
  • 90 g caster sugar
  • 20 g icing sugar
  • 220 g butter (we used Vitalite)
  • 330 g plain flour (GF if reguired)
  • *strawberry jam/boiled sweets/rock (optional)
  • *chocolate chips/finely chopped nuts/shredded coconut (optional)
  • *sugar/cinnamon sugar (optional)
Prepare
  1. Put the sugars in a large bowl and using a wooden spoon, beat the butter in until you have a smooth creamy consistency.

  2. Sift the flour in and mix until the dough comes together.

  3. (optional step) If you wanted to add small chocolate chips, or roughly chopped nuts to the dough, you can add these now (divide the dough if you wish). Alternatively use the chocolate/nuts for decorating once cooked.

  4. Roll out the dough to 0.5-1cm thick and cut in to shapes using a sharp knife or cutters. If you want to add centres to your cookies, cut two the same shape, then cut out the centre on one. Stack the cut out cookie on top of the whole cookie and gently press them together. 

  5. Put the cut cookies (allow some space between them) on a lined or greased baking sheet, use a fork to make a decorative pattern (or letters). Sprinkle with sugar if you wish, then place in the fridge for 30 minutes to chill.

  6. Remove from the fridge and fill any centres with crushed boiled sweets, rock or jam (not too full). Bake (in a pre-heated oven) until slightly golden at Gas Mark 5 (375f / 190c) for 12-17 minutes.

  7. Once the cookies have cooked allow them to cool slightly on the tray (they will be soft at first but quickly firm up). Decorate with sugar, cinnamon sugar, drizzled chocolate, or dip half in melted chocolate then sprinkle with nuts or coconut.

  8. Arrange perfectly and wait to be swept off your feet (after all the cookies have been devoured)! 

  9. Enjoy! ?

Tips & Storage
  • Keep in an airtight container for up to three days.
  • Make the dough ahead, wrap and keep refrigerated until use (up to two days). Allow to come to room temperature before rolling and cutting.
  • Add some spices to the dough (cinnamon, nutmeg, cardamom).
  • Use letters to cut your cookies and spell out ‘I love you’ or ‘Will you marry me!’ or just their name!
  • Make different shaped and decorated cookies so there’s lots of choice.
