Apple Crumble Slice (vegan & free-from)
Back to school day 🙁 It always saddens me when the holidays end, more so this time as we had some great plans but then coughs and colds took over and we were stuck indoors. It’s not that we don’t have fun at home – we watched LOADS of films, played some board games, even built some lego (I forgot how much I love lego)! Then of course there was the baking! 😀 We had time to do more baking than usual and caught up on all the seasonal bakes such as mince pies, Christmas pudding, mincemeat slice, gingerbreads, even making some savoury crackers and for the first time ever homemade cranberry sauce! 🙂
I had a plan for today, but the weather put paid to that! There is a storm in the UK (storm Eleanor) at the minute and besides all the school traffic, there are trees down and roads closed adding to the already congested roads. The winds are currently still about 50mph (80kmh) where we are, there are flood warnings in several parts of the country and power cuts to thousands of homes. Hopefully, everyone is okay and not too much damage has been suffered.
So time for more baking! This apple crumble slice is just perfect with a coffee as I sit inside in the warm, watching the leaves dancing in the wind and waiting for the end of the school day! 🙂 Serve it hot with a serving of ice cream, or eat it chilled with a dollop of coconut yogurt!
Ooo, if you’re planning an afternoon tea 😛 why not make these crumble slices, then add some caramel slices or a gorgeous chocolate pecan cheesecake, maybe some superfood cookies or tahini flapjack? Need cake? Try these very popular banana muffins or for something savoury, these delectable Turkish gozleme. Serve up with a choice of our delicious chilled chocolate drink or spiced mulled tea. Can I come!? 😛 😀
Or, how about a virtual New Year get together? 😀 You should head over to Angie’s Fiesta Friday where people meet up every week from Friday to Tuesday! Create a post to share at the party, add the party link AND the two co-host links, then check out all the lovely posts, hop around and post some comments. This week the Fiesta is co-hosted by Mollie @ The Frugal Hausfrau and Petra @ Food Eat Love. See you over there! 😀
