Apple Jumble! Yes really! 😛 🙂

What’s in a name!? It’s apple season! 🙂 For the first time our miniature apple tree has decided to bear fruits! They are crisp, ripe and juicy! Delicious!

In our veg box delivery this week, not only did we get apples in our fruit bag, we also got apples in our veg box! I love apples! 🙂 but we’ve had apple sauce, apple muffins, apple crumble and apple compote and we still have too many apples! I needed something different, something everyone would eat and something yummy! I decided just to layer the apples in a bowl, add some spice and raisins and bake it with a fluffy aquafaba topping… but then thought ooo oats! Crumbly, jumbly, sweet juicy apples, cinnamon, spice and all things nice… Jumble! I’m going to make a jumble! 😛 😀 So Jumble it was!

I ‘jumbled’ the oats with some mixed spice and syrup, then I ‘jumbled’ the apples with cinnamon and the oats. This… THIS can be dessert with ice-cream, with custard, with cream OR it can be breakfast!!! Yes seriously! This is as tasty cold as it is hot and oats make porridge make breakfast right? and we should all have fruit as one of our five a day and breakfast should be where it starts right? Absolutely! 😀 This is a GREAT breakfast! Maybe add some yogurt or just eat it right out of the bowl! 😛

This is DEGF! Dairy. Egg. Gluten. Free! So it’s a winner all around and has got to be shared! … definitely an @Waitrose Autumn Warmer (#AutumnWarmers). I’m also taking my Apple Jumble to Deborah’s plant based pot luck  (#65) AND to Angie’s Fiesta Friday! (# Fiesta Friday 89)  This jumble wants to party! 😀

Gather

Prepare

  1. Put the oats in a large mixing bowl with the spice, sugar and agave. Mix well (fingers gives the best result). Loosely put a third to a half of the oats in the bottom of an ovenproof dish – about 1cm-1.5cm deep.
  2. Add the chopped apples to the rest of the oats, then add the cinnamon and vanilla. ‘Jumble’ the mix all together until evenly combined (fingers again!) Spoon the apple mix onto the oats.
  3. Pour the boiling water over the whole dish then bake at Gas Mark 5 (375f / 190c) for 25-35 minutes. The top should be browning when ready.
  4. Enjoy!

Gather

  • 200g whole oats (GF if required)
  • 1 teaspoon mixed spice
  • 1 teaspoon coconut sugar
  • 2 teaspoons agave syrup
  • 600g (approximately 5-6) eating apples roughly chopped (I used Braeburn and Cox)
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • 200ml boiling water

Serve & Store

  • Hot or cold! Hot for dessert with custard, cream, ice-cream. Cold for breakfast with yogurt or just as it is!
  • Keep refrigerated (once cooled) and eat within five days (like it’s going to last that long!)
  • Freezable! Freeze for up to a month. Defrost thoroughly before use.
