Brighten up your weekend with this Brilliant breakfast

Breakfast! You know you should always eat something first thing right? Well, you wouldn’t drive your car without putting fuel in it (or charging it 😛 !) I know some people can’t face anything first thing, but we should all try to eat within a couple of hours of waking – even if it’s just a piece of fruit! ???

Some people make the excuse that they don’t have time, but your next breakfast will be at the weekend, so no excuses! This doesn’t take long to prepare, then you just put it in the oven and leave it while you get ready (or read the paper)! It will be the weekend after all! 😛

I’ve been so ridiculously busy the past two weeks (you might notice I didn’t post on Wednesday this week)! Hopefully, from this evening onward I will have a bit of me time! Yay! 😀 So, what do you think? Should I do a bit more decorating, or finish the decluttering which I started – which resulted in not being able to find anything while it is all in one place waiting to be sorted! ?

I should really do some more baking! Besides the bread which we’ve still managed to make weekly, we were making a load of baked goods such as pretzels, welsh cakes, rock cakes, shortbread to freeze or last the week (yes, my boys like their bakes)! Is there anything you would like to see? I think I’m supposed to make a cake for next week – I could get some practise in for a foolproof Mothers Day recipe (hint hint boys if you’re reading)!

Oh, I was going to make something green for St. Patricks Day (Happy St. Patricks Day if you’re celebrating)! I was thinking something sweet, minty and naturally coloured – cookies? ice-cream? cheesecake? Maybe with chocolate? Any suggestions? 😀

Right, back to the breakfast! It was a cold and very windy morning! I thought of having toast and marmite (a great source of B vitamins), then thought how about porridge, but sometimes I’m just not in the mood for porridge! Then I thought, oh! Pancakes! 😀 Do you know we used to make pancakes almost every day! We love pancakes, but I find they do tend to make the house smell a bit (well, anything cooked in a frying pan really)! Then I thought, you know what… let’s create a pancake style dish which bakes in the oven! 😀 Yes really! 😛

Batter, Fillings, Bake!

You could use any thick pancake mix for this, but the recipe below has been tried and tested and works great! Then of course, you can add anything you like to the batter, even divide the batter into sections and make a few different variants! I was going with mixed berries (raspberries, blueberries, currants), then thought, why not throw in a handful of chocolate chips too! ? Plus a sprinkling of brown sugar for good measure and to sweeten the currants and balance with the dark chocolate. You should make this! It’s as easy as making the batter, pouring it in the tin, scattering over your additions (I’m going to do peanut butter and chocolate next time)! and baking. You can then top your pancake-style slices with all your regular toppings – we used coconut yogurt, nut butter and maple syrup!

Wow! That’s all I’m saying! Oh, except you really should try this! All your pancakes baked at once in one pan! No waiting for the next one! No standing cooking whilst everyone else munches away while you cook pancake after pancake! No eating on your own because they’ve finished and left the table! Oh yes! Pancakes in the oven… maybe it should be an ovencake? or a tincake? or just pancake in a tin!? Okay, I’m talking too much today! Come on… join in the conversation below! 😀

Oven Baked Pancake Tray

Make all your pancakes at once by baking the batter in the oven! One giant tray full of your favourite pancake mix! Leave it to cook while you get on with your morning routine! Perfect #weekendbreakfast

Gather
  • 1/2 banana
  • 1 cup porridge oats gluten free if required
  • 1/2 cup plain flour gluten free if required
  • 1-2 cups milk (quantity depends on viscosity) dairy free if required
  • 1.5 teaspoons baking powder gluten free if required
  • pinch of salt
  • 2 teaspoons ground linseed/flax sub 1 egg if that’s your thing!
  • 1/2 cup mixed berries
  • 2 tablespoons chocolate chips dairy free if required
  • 2 teaspoons coconut sugar
  • * toppings to serve
Prepare
  1. Put the banana, oats, flour, milk, baking powder, salt and flax in a blender and blend until combined. The mixture should be fairly thick but pourable (add more milk if required).

  2. Pour into a lined baking tin (we used a 26cm x 17cm rectangular tin) so the batter is about 0.5cm. You should have some left over.

  3. Scatter your berries, chocolate and half the sugar over the top, then drizzle a bit more batter over to partially cover them. Sprinkle the remaining sugar over the top. The batter should not exceed 1cm (0.75cm is ideal)! 

  4. Bake at Gas Mark 6 (400F / 200c) for 20-30 minutes. The batter should be just starting to get crispy around the edges. The top will likely crack but this doesn’t affect the taste. Cook for a bit longer if you want a crispier bake.

  5. Serve with your toppings. Enjoy!

Tips & Storage
  • Just use the idea and use your favourite pancake batter mix (make sure it is thick enough).
  • Customise the pancakes to suit you and your family.
  • Make smaller individual pancakes by using small round cake tins (don’t forget to line them first).
  • Add your favourite fillings: berries & chocolate; apples & cinnamon; banana & honey; peanut butter & chocolate; or just leave plain for toppings.
  • Blend a spoonful of cacao or your favourite spice to the batter to make a flavoured pancake.
  • Be fancy and make a symmetrical pattern with your fillings, or make a smiley face, a heart, a name…
  • Top your cooked pancake slices with chocolate spread, yogurt, jam, sugar, syrup, more fruits, nuts, nut butter or anything else you fancy!
  • Store any leftovers wrapped in the fridge for up to three days. Reheat by popping in a preheated oven for five minutes.
