Cake, birthdays & holidays!

First of all, just a reminder for you all not to believe everything you read online! Rewind 20 years and the world was a much more honest place! Today there are all sorts of unscrupulous people parading as anything they want to be! This week on a local website somebody posted about an email scam which sounded completely authentic and fortunately the individual concerned only lost £100 (UK) before the realisation dawned. Okay so £100 is a lot, but it could have been far worse! Whenever you do anything online always ensure you are covering yourself and protecting yourself from fraud. Think before you give your personal details out and where possible it doesn’t hurt to slightly alter your details! Which leads me to today! 😀 I’ve had so many emails this morning from various companies wishing me Happy Birthday! I even had one in the post! 😛

Not that I use facebook for personal reasons (my blog has a LifeDietHealth page) but for those few people who have managed to find me, it seems Facebook thinks it’s my birthday too! Haha internet! Fooled you! Today is NOT my birthday – but thanks for all your messages anyway! 😀 😛 It’s soon though! 😛

Speaking of birthdays though, this week has seen two very important birthdays! Firstly my mothers 🙂 and as I actually got to see her on her birthday I thought I’d make a cake (a regular cake not a vegan, gluten free one)! Two days later it was my best friends birthday (a special birthday)! so of course I had to make another cake! 🙂 As I had seen such a delicious looking cake on Fiesta Friday when I was co-host, I thought I’d borrow the idea! So, inspired by Shani at The Weekend Sugar, here are my two birthday cakes (it was VERY busy in the kitchen)!

In fact, it’s just been very busy all round! It’s half term in the UK this week and as my son has recently had exams at school, then we decided to take advantage of a week off! It started off with a 5km race for charity with lots of coloured paint (no, not me running)! a slippery 100m water slide, eating out, meeting friends, ice-skating and now football. Gosh it’s only Wednesday morning! (I slipped in a theatre visit too)! 

Apart from cake though, not much else has been cooking, but we have made some delicious smoothies AND smoothie bowls! 🙂 We usually just make smoothies, but this time we decided to try them in bowls! The great thing about smoothies is that you can use whatever fruit you have to hand, any milk or yogurt or as we did just oats and water for the main base (it makes a quick thick oat milk). Sprinkle whatever you fancy over the top and enjoy! 🙂 Here’s an idea to get you started 🙂

Smoothie bowls (vegan & Free-From)

  • Servings: 1-2
  • Difficulty: easy

Gather

  • 1 mango (chopped)
  • 2 nectarines (including skins)
  • 1 banana (for a thicker smoothie)
  • 2-3 tablespoons coconut
  • 5-6 tablespoons oats (gluten free if required)
  • 250ml water
  • 50ml plant based milk (we use carton coconut milk)
  • 1/2 cup of ice
  • 1 teaspoon of powder such as lucuma, maca or protein powder
  • Toppings: sliced fruit, seeds, nuts, coconut, petals etc.

Prepare

  1. Throw everything (except the toppings) in the blender and blend until smooth!
  2. Pour into a bowl and sprinkle over your toppings for extra bite.
  3. Enjoy!

Serve & Store

  • Best served immediately 🙂
