Chocolate Cake!

It’s been a while since I’ve posted a chocolate recipe and as I was playing in the kitchen this week and created this delicious light fluffy cake, I thought I’d share it with you! 🙂 This would be perfect for Valentines Day, either as dessert or just to say ‘I love you’! 🙂

I was aiming for an egg free, dairy free cake and decided to experiment with aquafaba again. I’ve made several things using aquafaba but not cake. For those of you puzzling over aquafaba (where have you been!) it is the liquid from a can of chickpeas (or other beans) which you’d normally drain away! Yes, this gloopy liquid actually whisks up to resemble egg whites and in a cake it is perfect! 🙂 I added apple cider vinegar to the whisked mixture, did a taste test and not a hint of chickpea flavour remained! 😀 What I had was a fluffy white neutral tasting mix. A perfect base for a delicious light cake!

Chocolate Cake (Vegan & Free-From)

  • Servings: 3-4

Gather

  • 100ml aquafaba (liquid from the tin of chickpeas)
  • 2 teaspoons apple cider vinegar
  • 50g coconut sugar
  • 50g coconut oil melted
  • 50g ground almonds
  • 100g plain flour (gluten free if required)
  • 2 tablespoons cacao powder (or flavoured cacao)
  • 2 teaspoons baking powder

Prepare

  1. Whisk the aquafaba until soft peaks form (trust me this works)! Add the apple cider vinegar and whisk until you have firm peaks.
  2. Check the coconut sugar is lump free then gently whisk into the aquafaba mix. You should end up with a golden coloured glossy mixture which leaves a ribbon trail when you lift the whisk.
  3. Pour the coconut oil into the mix, followed by the almonds, flour, cacao and baking powder. When all the ingredients are in the bowl carefully mix to combine (try to keep some of the fluffiness!)
  4. Spoon the mixture into a prepared shallow tin and using the back of a spatula spread it out evenly (without flattening the mix too much)!
  5. Bake at Gas Mark 5 (375f / 190c) for 12-15 minutes. Insert a skewer and if it comes our clean, it’s ready. Allow to cool in the tin for ten minutes before turning out (you should see it pulling away from the sides of the tin).
  6. Enjoy!

Tips & Storage

  • Eat as it is!
  • Add your favourite icing in the middle or on top – buttercream, fondant, yogurt.
  • Serve with some fresh fruits – strawberries, blueberries, raspberries.
  • Drizzle with melted white chocolate.
  • Cut into shapes such as hearts before serving.
  • Sprinkle with flaked almonds or toasted coconut.
  • Use flavoured cacao such as orange, coffee, cinnamon.
  • Store covered for up to three days.
