Courgette Ideas…

Love them? Despise them? Well… I’m not sure you can just say you don’t like any vegetable without trying them cooked in different ways!? I mean, how can you compare chargrilled cajun marinated courgette strips to spiralised pesto courgetti?

Our allotment has so far produced some lovely big courgettes from just two plants…

Sure we panfried a few, made ratatouille, added some to curry then realised we’d eaten them like that enough! So, thinking caps on for new ideas and decided to make a lasagne using strips of courgette instead of pasta. So good!!! Oh so much better than good! Absolutely delicious! 😀 😀 😀 If you would like me to post the recipe let me know in the comments! 😛 Oh and we made courgette pizza strips too!!!

Then we wanted something different. Something sunny. Something fresh. So out came the spiraliser! This is so quick and easy! Oh Summer in a bowl! Nutritious and delicious ingredients such as avocado, basil and coconut… Yes don’t miss the coconut!

Pesto Courgetti (Vegan & Free-From)

  • Servings: 1-2

Gather

  • 1 large courgette
  • 1 avocado
  • 1 handful of fresh basil
  • 3-4 tablespoons milk (I used unsweetened carton coconut)
  • Juice of half a lime
  • 1/2 teaspoon red chili seeds
  • 1/2 teaspoon ground black pepper
  • Salt to taste (I used pink Himalayan)
  • 3-4 cherry tomatoes halved
  • 1 tablespoon sesame seeds
  • 1 tablespoon desiccated coconut

Prepare

  1. Spiralise the courgette (or coarsely grate if you don’t have a spiraliser).
  2. Put the avocado in the blender with the basil, milk, lime, chili, pepper and salt. Blend until you have a smooth puree. And more milk if it’s too thick. Taste test and adjust seasoning.
  3. Pour the avocado pesto over the courgetti (or zoodles) and gently mix to combine.
  4. Scatter the tomatoes over, then sprinkle with sesame and coconut.
  5. Enjoy!

Serve & Store

  • Serve as it is!
  • Add some crusty bread.
  • Throw some falafel on the side.
  • Best served fresh but can be stored refrigerated for a day or two.
