How to make Amazing Chocolate Cherry Pancakes

Oh yes! This week I have been experimenting and have mastered how to make amazing chocolate cherry pancakes! These pancakes are soft, fluffy, chocolatey and definitely delicious! Now, let me tell you that I am not generally a chocolate anything fan… chocolate yes, but chocolate cake no, chocolate ice cream no, chocolate sauce no. Why then, would I make chocolate pancakes? Well, I already have several pancake recipes on here (I do like pancakes)! and as Shrove Tuesday (Pancake Day) is coming up and Valentines Day is almost upon us, I thought I should try something different! If pancakes are not your thing and you’re looking for a Valentines idea, how about making these shortbread cookies.

The Chocolate Cherry Pancake Recipe

I have created a recipe for you which uses storecupboard ingredients. You can use regular plain, or gluten free flour and baking powder, and standard cocoa or raw cacao powder. Please note that all cocoa has different strengths so you can adjust the amount to your taste. Any milk will work, the thicker the better to get a great consistency (I used oat milk). The ingredient you may not have is linseed (flaxseeds), this is a fantastic storecupboard item to use in place of eggs. You can of course use whatever your normal egg replacer is, or if you use them, replace with one egg. Here is the recipe.

Gather
  • 100 g plain flour (gluten free if required)
  • 200 ml milk (I used unsweetened bottled oat milk)
  • 2 teaspoons baking powder (gluten free if required)
  • 4 teaspoons ground linseed
  • 2 tablespoons cocoa powder (adjust if necessary)
  • pinch of salt
  • oil of choice (or non stick pan)
  • Optional Topping or Stacking Ingredients
  • 1 cup of sweet cherries (frozen, fresh of tiined)
  • 1 cup of whipped cream of choice (coconut, regular or spray)
  • sprinkle of grated chocolate or extra cocoa powder
Prepare
  1. Put all of the batter ingredients in a bowl and whisk until smooth.
  2. Melt or heat a small amount of oil in a frying pan, or use a non-stick pan, then spoon a ladleful of the batter in. Gently swirl the pan to level the mixture.

  3. When bubbles start to appear, flip the pancake over and cook on the other side (the second side requires less cooking). When you flip it, you should see it start to puff up.
  4. Remove the pancake and keep warm (put in a low oven) whilst you use the rest of the batter. to make more pancakes.
  5. Create a pancake stack by layering a pancake with cream (or yogurt or ice-cream) and cherries, then repeating. Finish with cream, a few more cherries and a sprinkling of chocolate.

  6. Enjoy!

How to serve your pancakes

I have made these into a chocolate cherry pancake stack, but you could of course just serve them as they are with your favourite toppings. For the chocolate cherry pancakes, any cherries will work – I used frozen, but fresh or tinned will also work. Then you can choose your favourite cream, or use yogurt or ice-cream to layer these with… or a combination of them all! A sprinkle of your favourite chocolate, or just a dusting of cocoa powder finish these off.

Are the pancakes easy to store?

Ideally, you would make these and eat them, but they do actually store quite well. If you have any leftover after making, you can keep them in the fridge for a couple of days, or indeed, wrap them and freeze for up to a month. To reheat you can pop them in the toaster from frozen, warm them in a pan, or even microwave them, then assemble when needed just before eating. If you have already assembled your pancake stack (assuming it is not with ice-cream), then this can still be stored in the fridge and eaten the next day but it will be more cake like. You would need to eat the pancakes cold if stored once stacked or filled with yogurt or cream.
