Make an easy delicious fruit pie!

Pies!

This week we’re going sweet! Of course, you can have savoury pies and have them for dinner (or lunch), but today we are going easy and sweet! I already have several pie recipes on here, but this one is a bit different! Okay, so maybe you have a different name for this, but pastry and a filling is pie right?

British Pie Week

Ah yes, it’s time for British Pie Week again! This year it runs from Monday 4th March to Sunday 10th March so there is plenty of time to get your pies in! You can have savoury pies, sweet pies, handheld pies, crusty pies, stuffed full pies, flaky pies, complicated pies or these very very easy puff pastry fruit pies.

The Pie Recipe

I am sure there will be some of you who will say this is not a recipe, but sometimes, we just need ideas! So here are some ideas for you!

You need a ready made roll or block of puff pastry. You need your favourite fresh fruit (or you can use frozen if it’s easier). Then you need something creamy to join it all together. You can use custard, or yogurt, or cream, or even ice cream.

First of all, with your pastry unrolled (or rolled out to 4-5mm thick), cut your pastry into rectangles (or triangles or circles if you so wish) of a more-or-less similar size. Spread them out on a baking tray and bake for 10-15 minutes at Gas Mark 6 (400f /200c) Once cooked, allow to cool on the tray, then carefully remove to a cooling rack and allow to cool completely.

Get creative! Start with a pastry slice, top with your creamy base – either dot, dab or spread. Add some fruit. Repeat. You can add in a sprinkle of spice or cocoa (or even sugar) if you wish. You can make it 1 layer, or 2 layers, or even higher if you can! You can finish with the pastry, or finish with the fruit, then dust with icing sugar or cocoa or spice. Your pie, your way.

Instead you can search here for items such as chopping boards, kitchen knives, mixing bowls, baking trays and other items which you might need.



Serving

Serve your pies freshly made as they are! I would assemble these as you want to eat them. If serving to others, you could arrange all your fillings in bowls and make a create-your-own pie event.


Storing

The cooked puff pastry can be kept for a few days in an airtight container whilst keeping it crispness. Your fruit can be prepped and stored refrigerated, as can any custard.
