Sensational soup season is here

Homemade is easier than you think!

I used to be very scared of making soup! My late Mum always used to make what she called ‘big soup’ which basically meant, that was dinner! You might wonder how a soup could be a whole meal, but Mum’s soup was packed full of loads of vegetables and was served with hunks of fresh crusty bread. Big soup was definitely enough for a meal and there’s something comforting about a big bowl (or two) of fresh homemade soup.

If you’ve been following me for a while (or know me personally), you probably know that I love lentils and I will often choose red lentil soup over another. However, there are many ways to make quick and easy soups using leftovers, frozen veg or even tinned veg and beans. In our house aside from lentil soup, we have ‘red soup’ or ‘cream soup’ the first being tomato based from tomato puree, the latter having milk added. You can add vegetables, potatoes, beans, chickpea, spices, herbs, pasta, even other grains such as rice or quinoa. Have a look at the recipe index for soups and choose your favourite! What do I need?

The easiest soup just needs a large pan and a spoon for stirring! A more time consuming soup might require peelers, knives, blenders or even a slow cooker. Serving

Serve your soup on its own, with some fresh bread or even with a side of chips! Have you ever tried soup toppings? The obvious is probably croutons, but you can add fresh leaves, chopped tomato, yogurt, nuts, seeds, balsamic vinegar or one of my favourites, cooked crispy onions.

Storing

Any soup should be stored covered in the fridge. Consume within 3-5 days (depending on the ingredients) reheating thoroughly before serving. Soup can also be portioned and frozen for later use. Be sure to label the soup and date it, it should be good frozen for up to 3 months.
