Simple but delicious 2 ingredient snack you’ll love
This week is a very simple but delicious 2 ingredient snack you’ll love! Now of course, you can make these with more ingredients, but this is a tree-nut free recipe for my friend Anna! This is a sweet recipe, almost fudge like, and if you can mash, mix and roll, you can make these!
The recipe
The most important ingredient here is dates! Now, there are so many types of dates available, but you want the softest plumpest natural whole dates for this recipe. Generally these dates will be found in a cardboard box in the fridge and are available at greengrocers, wholefood stores or a specialist Asian store.
The other ingredients are a personal choice from peanut butter powder, cocoa powder or coconut (or a mixture).
Additions to the recipe
As with most of my recipes, you can of course switch things up to suit you. Although I have made this version nut free, usually I would add in some chopped nuts too for extra texture. You can also add some flavours, either in the form of flavour drops, extract, essence or a splash of flavoured coffee (mint & orange work well with the cocoa). You can also change what you roll these in, mix it up and do cocoa on the peanut balls and vice versa, or try ground or chopped nuts, or your favourite spice. If you like seeds, try adding or rolling in sesame, pumpkin or sunflower seeds (toasting these first give more depth of flavour).

2 ingredient snacks made with dates and peanut butter powder or cocoa.
- 100 g soft dates (de-stoned weight, approx 10 – 11 dates)
- 10 g peanut butter powder (8g & 2g)
- 2-4 g cocoa powder
- 5 g desiccated coconut

Put the de-stoned dates in a bowl and start to mash with a fork. This will get easier the more you mash and the dates will start to change to a paler colour. Once you have a rough paste, move onto the next step.

Divide the mixture into 2 (50g per bowl). Add 8g of the peanut butter powder to one bowl and mix well. You might need to get messy and use your hands! You can either then divide this mixture into 5 or 10 pieces and roll into balls. To finish, roll the balls in the remining (2g) of peanut butter powder.

In the other bowl, add cocoa powder and mix. Every cocoa powder tastes different, so be cautious and add gradually (& taste test). Divide into 5 or 10 pieces and roll either in a bit more cocoa powder, or in the coconut.

These can be stored in the fridge, freezer or at room temperature.

How to serve your snacks
You can eat these as soon as they are ready, or you can chill them to make them a bit firmer. Alternatively, you can wrap and freeze these to make them chewy. These are great on their own, or with a piece of fruit or a few nuts. You could also add these to your breakfast – they work well on muesli, porridge or overnight oats! Are these snacks easy to store?
These snack balls are easy to store and can be kept on the worktop, or in the fridge. They will keep for several months and still taste great! These can also be frozen for up to 3 months (remember to wrap them so you can separate them, label and date). They can be eaten frozen, or left to thaw in the fridge or at room temperature.
