Easiest chickpea curry ever!
Oh my gosh, this really is the easiest chickpea curry ever! If you ever told me that curry could be made so easily, I really would not have believed you! This recipe was created from my laziness and the want for something warming, comforting and nutritious. If you can open some tins, measure spices, chop an onion and have an oven, then you can make this! Yes! It really is that easy!
The Curry Recipe
We have made this curry with chickpeas, but you could as easily use some red or green lentils, or even some white beans such as cannelini or haricot. To make this as easy as possible, we have used tinned produce, but if you only use (or have) dried, then it will just take a bit longer, but still be easy! The spices we have used are standard spices we use for most Indian style dishes. If you are lacking one or two, just use what you have in similar quantities. A powdered curry or masala mix will work just as well as the individual spices and the taste will still be great! Add the salt, pepper, garlic and ginger and you’re well on the way to making the easiest chickpea curry ever!
Now it's easy to make a tasty chickpea curry!
- 4 tins chickpeas
- 1 tin chopped tomatoes
- pinch of salt
- 1/4 teaspoon black pepper
- 1 tablespoon garlic granules
- 1 tablespoon turmeric
- 3/4 tablespoon coriander powder
- 1 tablespoon cumin powder
- 1 teaspoon chilli flakes
- pinch of ginger powder
- 1 medium onion thinly sliced
- *optional bag of baby spinach

Tip the chickpeas with their liquid into a large ovenproof dish.

Add the chopped tinned tomatoes, followed by all the herbs and spices. Mix together well.

Stir in the sliced onion, followed by the spinach if using.

Place in the oven, gas mark 6 (400f / 200c) for 45-60 minutes.

Serve with rice, naan, salad and raita, or try on a jacket potato! Decant leftovers into a dish and keep refrigerated for up to three days.

What do I need?
This is such a simple recipe that hopefully you already have everything you need! We think if you are missing anything it would be the individual spices (or maybe you’re out of tinned chickpeas), but you can easily pick these up on your next shop! What to serve with curry
This curry can be a meal in itself if served with your favourite grain such as brown rice, or even in a jacket potato. You could also just serve it with a fresh salad, maybe add some flatbread or wraps too. If you want to make a bigger meal of it, why not make a range of dishes. We would suggest serving this with delicious lentil pakoras, some tasty lentil daal, or some tofu tikka masala.
