Mixed Berry Sorbet – Vegan & FreeFrom

Hello! 😀 It seems like ages since I’ve been on my blog but it as (as usual) only a week since I posted last time! I guess because we’ve been on a UK road trip and packed so much into a short space that it appears to have been longer! My boys have played aeroball, done archery, been canoeing, quad-biking, abseiling and climbing! We’ve swum, seen wild ponies and eaten lots of good food! We’ve made new friends and met old ones (from school!) All in a week!!! WOW… tired just thinking about it all!!! I do have some more photos but I’ll save those for another day as we’re off to the beach now! (Yes, we’re still travelling)! 😀

The sun has finally returned to the UK and today is set to be about 28 degrees centigrade (82f) again which is mightily hot for where we are in the world! 😛 So, to cool down I created this delicious mixed berry sorbet! So very quick and easy to throw together and even easier to eat! 😛 Let me know if you try it and share your photos on instagram @LifeDietHealth. Of course you can change the flavours to suit yourselves and make it sweeter if you like… here’s the recipe:

Mixed Berry Sorbet (vegan & Free-From)

  • Servings: 1-2

Gather

  • 2 cups of frozen mixed berries (raspberries, blackberries, strawberries, blueberries)
  • 1 cup of frozen sliced banana
  • 1 cup of ice cubes
  • 1-2 teaspoons of liquid sweetener to taste (maple syrup or agave)
  • 1/2-1 cup of milk (I use unsweetened carton coconut milk)

Prepare

  1. Put the berries, banana and ice in a blender and pulse until you have smaller pieces.
  2. Taste test and add sweetener if necessary.
  3. Gradually add the milk and blend until you have a soft smooth texture (not too runny).
  4. Scoop into bowls and serve immediately.
  5. Enjoy! 🙂

Serve & Store

  • Add your favourite toppings – fresh fruits, nuts etc.
  • Put in a freezer-proof container and freeze for up to a month – allow to thaw a bit before serving.
  • Change the fruits – try frozen pineapple and mango.
  • Add some extras such as chocolate chips or broken nuts.
