Peanut Butter Swirl Ice Cream

It. Is. Hot!

Like, baking hot! This is the U.K. It doesn’t do hot! At least, it didn’t! The last couple of days have been around 33c (91f) and that for us, when summer usually averages around 20c (68f) is very hot!

Hence no cooking, just salads and ice-lollies this week! Oh and I so forgot how delicious this simple ice-cream is!

It is so creamy that you think it must be full of fat and calories and not good for you at all, when it is in fact so much healthier! 🙂

First, you need some bananas – not yellow yellow skinned, ones with a bit of brown speckles on would be perfect. Peel them, chop them and place them in a bag in the freezer. That is as simple as it gets! That is the base of your ice-cream! Blend when frozen, maybe with a dash of vanilla and a splash of milk and you have yourself a delicious creamy healthy ice-cream.

This ice-cream has a swirl of peanut butter running through it to give it extra deliciousness! This one was made with dates, a bit of milk, peanut butter powder and a sprinkle of salt. I layered this through the ice-cream then let it all freeze for a bit – although you can eat it immediately! Delicious. This is real good! You should so make this! 😀

Peanut Butter Swirl Ice-Cream

An quick healthy ice-cream which is so creamy and delicious!

Gather
  • 100 g destoned dates (fresh soft ones are best)
  • 50 ml milk (we used oat milk)
  • 1 tablespoon peanut butter powder (we used PBfit)
  • pinch of salt
  • 3-4 medium bananas (peeled, chopped and frozen)
  • 1/2 teaspoon vanilla extract
  • splash of milk if needed
Prepare
  1. Put the dates in a powerful blender or food processor with the milk, peanut butter powder and salt. Blend until smooth. Set aside.

  2. In a clean blender or food processor, add the bananas and vanilla. Pulse until they break down a bit, then blend until smooth. Stop when you have a creamy ice-cream.

  3. Layer the ice-cream in a bowl, top with some peanut butter mix, use a fork to swirl through, then repeat by adding more ice-cream on top. Either freeze for later or eat immediately.

  4. Serve in bowls or cones, add crushed nuts or chocolate chips. Enjoy!
