Avocado! Full of vitamins, minerals and healthy fats, paired with tofu to make three completely different dishes! I first made these last year and never got around to posting the main dish! 😀 Several of you have been waiting for this but I needed to take a few more photos before sharing my avocado fritter recipe! So here it is! Finally!!! Deliciously crisp-on-the-outside morsels giving way to a creamy spiced filling. Drizzle over some tart pomegranate dressing and you’ve a perfect match…delicious! 🙂

You can use the avocado and tofu base to make a whole meal! Start with this easy savoury mousse, then have the avocado fritters (maybe with salad or wraps) and finish with a chocolatey (but oh so good for you) luscious dessert dip!

 

Vegan Avocado Fritters

  • Servings: 1-2

Gather

  • 100g avocado (peeled and destoned)
  • 100g silken tofu
  • 60g chickpea flour (gram, besan)
  • 1/4-1/2 teaspoon salt (I use pink Himalayan)
  • 1/4-1/2 teaspoon ground black pepper
  • 2-3 teaspoons curry powder
  • 1.5 teaspoons nigella seeds

Prepare

  1. Put everything into your food processor (or blender) and blitz until smooth and creamy. Please don’t be tempted to taste the mixture if you have added the gram flour – it is NOT good raw!
  2. Scoop rough spoonful’s out and either gently fry (I used coconut oil) or bake at Gas Mark 4 (350f / 180c) for 15-20 minutes. You can flatten then slightly if you wish or leave them fatter. Don’t worry about the shapes too much – the idea is to have lots of different fritters!
  3. Enjoy!

Serve & Store

  • Eat with mixed salad for a delicious main meal.
  • Throw a couple into your favourite wrap with some salad and sauce.
  • Serve on their own for a snack with a tasty dip.
  • Have as a side to curried vegetables.
