Valentines Thoughts & Sugar Free Chia Jam

Mixed feelings abound on this day! If you’re in a new relationship then this day will probably be filled with loads of romantic gestures   If you’re married or in a long-term relationship then this could be the day where one of you gets into trouble for not doing enough! Maybe you’ve ‘agreed’ that you don’t ‘do’ Valentines day but when you see everyone posting photos of flowers, chocolates, jewellery or romantic dinners then you secretly wish you did… then take it out on your other half!? Perhaps you are single? Newly single or long-term single and therefore Valentines day is a sad and lonely day for you? Whichever it is, it is actually ‘just another day’! If you are feeling more lonely than usual on this day – share your feelings! Phone someone close to you just to say hello or better still, go and visit if you’re nearby! Valentines day is just one of those gentle reminders not to take others for granted, so make sure you make at least one person smile today!  Even posting comments on blog posts (I do try to personally reply to all messages posted on this blog) can make your day brighter when you get a response!  

Today’s quick and easy recipe is not cake or chocolate but something light, tasty and full of good stuff! It’s easy to make with as little as two ingredients (I used three) and is so simple you wouldn’t believe it could taste so good! Of course, if you are doing Valentines (in any form), you could make this as a surprise gift, as a super addition to a breakfast tray, or as a side for afternoon tea and cake! 🙂 Or… just make a jar and sit and eat the whole lot! Seriously it’s that good! 🙂

Sugar Free Chia Jam

  • Servings: 3-4
  • Difficulty: easy

Gather

  • 150g frozen blueberries (substitute raspberries, strawberries, blackcurrants or all!)
  • 1 eating apple peeled, cored and diced (optional)
  • 1 teaspoon liquid sweetener (optional – I would suggest maple syrup or agave)
  • 2 teaspoons chia seeds

Prepare

  1. Put the frozen fruit in a saucepan and lightly cook until defrosted and starting to break down. If you want to add the fresh fruit, now is the time (I added the fresh apple pieces). Cook until there are still some small chunks of fruit and quite a lot of juice. Stir in sweetener if necessary.
  2. Sprinkle over the chia seeds, then quickly stir in. Cook for 1-2 minutes (don’t stir anymore). Turn off the heat and leave to thicken in the pan for 10 minutes.
  3. Transfer to a clean jar (or a dish) and leave to cool. The jam will thicken on standing.
  4. Enjoy!

Serve & Store

  • Store in a clean sterile jar.
  • Keep refrigerated for up to one month.
  • Use anywhere you would normal jam! Top your porridge, spread on toast, stir through yogurt, sandwich cakes or just eat from the jar!
