Blondie Fruit Slice!
This week we’re back to something sweet and delicious! I wanted to create something initially to use up a jar of mincemeat I found when tidying the fridge. I thought about making my usual date slice but decided that would be too sweet, so I had a think and came up with this! Instead of a crumble topping, I decided to create a less sweet version of a blondie. It works so well and I’m excited to share this latest creation with you! As I used mincemeat, mine is a Blondie Mincemeat Slice, but it would work equally well with either jam, or a fruit reduction (think cherries, blueberries, raspberries or apricots). We start with a thin crisp pastry base, top it with a sweet, fruity filling (or the mincemeat), and finish off with the light fluffy blondie layer. This dessert is a perfect blend of textures and flavours, and you’ll find it hard to stop at just one slice.
The Blondie Fruit Slice Recipe
I have tried to keep this recipe as simple as possible using ingredients you have to hand. The pastry is simply butter, flour and water. The topping needs a bit of yogurt and apple cider vinegar, along with flour, sugar, butter and a bit of baking powder. The filling is totally customisable to your taste and can either be ready made fruit compote, jam, mincemeat or simply fresh fruit cooked down with or without a bit of sugar.
A fruit slice with a pastry bottom and blondie topping
- 50 g plain yogurt
- 50 ml milk
- 1/2 teaspoon apple cider vinegar
- 125 g plain flour
- 50 g sugar
- 2.5 teaspoons baking powder
- 50 g butter
- pinch of salt
- 25 g cornflour
- 200 g fruit compote/puree/jam/mincemeat
- 50 g butter
- 100 g plain flour
- 2-6 tablespoons cold water

First make the pastry base by rubbing the butter into the flour and adding enough cold water to make a soft dough. Press into the base of a (lined) square tin and place the tin in the fridge (or freezer) until chilled (5-15 minutes). Prick the base several times. Bake as it is (bake blind) for 10 minutes at Gas Mark 4 (350f / 180c). It should be just starting to turn golden.

Whilst the pastry is cooking, prepare your filling. If using fresh fruit, wash and place in a saucepan with a bit of water. Heat gently until the fruit is cooked. Remove any stones as necessary (apricots/plums). Add sugar if needed (taste test and add a teaspoonful at a time). Cook the fruit until most of the water has evaporated, resulting in a thick and slightly sticky consistency. If using jam or mincemeat, allow it to soften slightly to make it easier to spread.

Remove the pastry from the oven and allow it to cool for a couple of minutes. Prepare your blondie mix.

For the blondie: First make your vegan buttermilk and set aside: whisk the yogurt and milk together, then add the apple cider vinegar and mix well.
In a large bowl sift the flour, sugar, baking powder and salt. Rub the butter in.
Add the milk mixture to the dry mixture. Combine everything thoroughly.

Spread your fruit / jam / mincemeat evenly over the cooked pastry base.
Top with the blondie mix and even out as much as possible. Bake for 30 minutes at Gas Mark 4 (350f / 175c).

Allow to cool in the tin for 15 minutes before carefully removing.

Serving
Serve your blondie fruit slice warm with cream, ice-cream or custard. Or serve chilled on its own or with a plain yogurt (or any of the former). Great as a snack, as part of a packed lunch, dessert or as part of afternoon tea or a coffee morning.
Storing
The cooked blondie fruit slices will keep for several days in an airtight container whilst keeping its freshness. You can also keep this refrigerated (especially if your house is very warm in this weather). You can also portion, label, date and freeze so you have something ready when needed.
